Biscuit salam recipe with whey and coconut

The first step is to melt the chocolate. You can do this either in a double boiler or in the microwave, being careful not to let it get too hot. Once melted, let it cool slightly so that it is warm but not hot when you add it to the mixture.
In a large bowl, mix the ricotta with the powdered sugar using a mixer or spatula until you achieve a smooth and creamy mixture. It is important that the ricotta is well mixed to avoid lumps. Add the melted chocolate and mix again, ensuring everything is well incorporated.
Once you have a uniform base, add the grated coconut and rum. Mix carefully so that the flavors combine perfectly. The last ingredient you need to add is the crumbled biscuits, which will give the salami consistency and texture. Use a spatula to incorporate the biscuits, being careful not to crush them too much to keep some larger pieces.
Once the mixture is ready, prepare a sheet of baking paper on which you will place the mixture. Using a spatula, spread the mixture on the baking paper, forming a rectangle or cylinder, depending on the desired shape. Roll the baking paper around the mixture, starting from one end, and squeeze tightly at the ends to create a compact roll.
After completing this step, place the salami in the refrigerator and let it cool for at least three hours, but ideally, you should leave it overnight. This cooling time will allow the ingredients to firm up and combine perfectly.
After the cooling time has passed, remove the salami from the refrigerator and remove the baking paper. Roll it in the grated coconut, covering it evenly.
