Ingredients

For the chicken salad:
- 120 g cream cheese (at room temperature)
- 120 g mayonnaise
- 60 g green onions (finely chopped)
- 1 tablespoon lemon juice
- 1 tablespoon poppy seeds
- 250 g chicken breast (cooked and finely chopped)
- 40 g crushed walnuts (lightly toasted)
- Salt and pepper to taste

For the egg salad:
- 8 large eggs (hard-boiled and peeled)
- 160 g mayonnaise
- 100 g green olives (finely chopped)
- 3 tablespoons red onion (finely chopped)
- Salt and pepper to taste

For the cheese pesto:
- 30 g fresh basil leaves
- 60 g fresh parsley leaves
- 2 garlic cloves (finely chopped)
- 45 ml olive oil
- 450 g cream cheese (at room temperature)
- 2-3 tablespoons sour cream

For assembly:
- 2 loaves of sliced bread (one white and one dark, preferably French Toast)

Preparation

1. Preparing the salads

Chicken salad:
In a large bowl, combine the cream cheese with the mayonnaise, mixing well to achieve a smooth consistency. Add the green onions, poppy seeds, lemon juice, and crushed walnuts. Finally, fold in the chopped chicken breast. Season with salt, pepper, and if necessary, add more lemon juice to achieve a balanced flavor. Ensure that the salad has a thicker consistency so it doesn't spill during assembly.

Egg salad:
Boil the eggs until hard, then let them cool. Grate the eggs on a large grater into a bowl. Add the mayonnaise, olives, and red onion. Season with salt and pepper, mixing until well combined. The consistency should be similar to that of the chicken salad.

Cheese pesto:
In a food processor or blender, blend the basil leaves, parsley, and olive oil until you get a paste. Add the cream cheese, garlic, and sour cream, continuing to blend until it becomes a smooth and slightly soft paste. You can reserve a few tablespoons of pesto for decoration.

2. Assembling the cake

Choose a springform cake pan and line it with plastic wrap, ensuring it is well covered. Cut the slices of bread to fit the shape. Remove the crust edges and cut the slices in half to use on the sides. Alternate the slices of white and dark bread on the sides of the pan, creating a pleasing pattern.

Place a layer of bread at the bottom of the pan, cutting the slices into triangles, and arrange them evenly. Add the chicken salad, pressing down firmly to eliminate any gaps. Cover with another layer of bread, followed by the egg salad, and then another layer of bread.

Add the cheese pesto, reserving a few tablespoons for decoration. Close with a final layer of bread, cover with plastic wrap, and refrigerate for 3-4 hours to set.

3. Serving the cake

After the refrigeration time has passed, carefully invert the cake onto a serving platter, ensuring the bottom side is facing up. Decorate with the remaining cheese pesto, and if desired, sprinkle some poppy seeds or basil leaves for a festive touch.

Serving suggestions

This mosaic appetizer cake is served cold, making it perfect for holiday meals, parties, or gatherings with friends. It can be paired with a dry white wine or a fresh cocktail, such as a mojito or an Aperol spritz. Additionally, you can serve it alongside a light green salad for a pleasant contrast.

Variations and tips

- Vary the ingredients: Try adding fresh vegetables like red peppers or cucumbers to your salads for an extra crunch.
- Incorporate herbs: Experiment with different herbs in the pesto, such as cilantro or dill, for new flavors.
- Customize the bread: Use whole grain or seeded bread for a richer taste and interesting texture.

Nutritional benefits

This appetizer cake is rich in protein due to the chicken and eggs, while the cheese provides calcium, essential for bone health. The nuts add healthy fats, and the fresh herbs contribute to a higher vitamin intake.

Ingredients: First of all, you need two loaves of sliced bread: one white and one black. I used French Toast. For the chicken salad: 1/2 cup cream cheese at room temperature, 1/2 cup mayonnaise, 1/4 cup chopped green onions, 1 tablespoon lemon juice, 1 tablespoon poppy seeds, 2 1/2 cups finely chopped chicken breast, 1/3 cup crushed walnuts, lightly toasted, salt and pepper. Unfortunately, I couldn't weigh the ingredients, I used the set of measuring cups I purchased some time ago! For the egg salad: 8 large hard-boiled eggs, peeled, 2/3 cup mayonnaise, 1/3 cup finely chopped green olives, 3 tablespoons finely chopped red onion, salt and pepper. For the cheese pesto: 1 cup basil leaves (I had a bag of leaves that weighed 30 grams), 2/3 cup parsley leaves, 2 cloves of garlic, finely chopped, 3 tablespoons olive oil, 450 grams cream cheese at room temperature, 2-3 tablespoons sour cream.
