I have always believed that every ingredient has value and should not be wasted. So, let's talk about what remains in the sieve after straining the consommé. This composition, although it seems like a simple leftover, is full of culinary potential. Usually, I don't throw away these ingredients and transform them into delicacies that can be enjoyed in various forms. For example, the two chicken breasts, vegetables, and scraps that are left can be ingeniously redeemed.

Yesterday, I decided to turn them into delicious meatballs. I added crushed garlic to give them an intense flavor, fresh dill and parsley to add a touch of freshness, two eggs to bind them, and a handful of breadcrumbs to achieve the desired consistency. I mixed everything until I obtained a homogeneous composition, which I then shaped into small balls.

These meatballs were not fried in oil; instead, I opted for a healthier method, baking in the oven. I coated them in flour before placing them on a tray, which I greased with a little oil. If you have an oil spray, it is ideal as it ensures an even distribution of fat. The result was a batch of 25 meatballs with a light and crispy texture, completely different from those fried in a bath of oil.

The taste of these meatballs is extremely fine and refined, even though they are simple meatballs. From the other half of the composition, I decided to create a sauce with olives, intended for the marinated pork meatballs. Although that sauce was meant for other dishes, I felt it would be a shame not to take advantage of its flavor to accompany my meatballs. I recommend opting for a white sauce with minimal additives. This allows the subtle taste of the meatballs to shine through, without being covered by strong flavors, such as bay leaves or other spices.

Thus, from an apparently banal leftover, I created a delicious and healthy dish that brings a smile to the faces of my loved ones. Every meal becomes an opportunity to make the most of what you have on hand, transforming it into something truly special.
