To prepare a delicious vegetable and pork stew recipe, we will start by cleaning and preparing the ingredients. The first step is to take the carrot, which we peel with a sharp knife, removing the skin. After peeling, we cut it in half lengthwise and then slice it into thin rounds, so it cooks evenly and adds a sweet and aromatic taste to our dish.

The next ingredient is the zucchini. It is washed well under a stream of cold water, then dried with a clean towel. We cut off the ends of the zucchini and then, similar to the carrot, cut it in half lengthwise, followed by cutting it into large cubes. This will add texture and a slightly sweet taste to our stew.

The leek, an ingredient that will give an unmistakable aroma, must be cleaned very carefully. We take only the white part, which we wash very well under cold water to ensure we remove any traces of sand or dirt. After washing, we gently squeeze it to remove excess water, then cut it in half lengthwise and finally into thin slices.

In a deep pot, we add two tablespoons of olive oil and heat over medium heat. Then, we add the chopped leek and a few whole garlic cloves, letting them sauté for 1-2 minutes until aromatic. Next, we add the sliced carrot and sprinkle a little salt and pepper, stirring constantly for about 5 minutes. Now is the time to add the pork, cut into suitable pieces, which will give the stew a special flavor.

Meanwhile, we drain the canned tomatoes from their sauce, and then add them to the pot along with a tablespoon of broth for extra flavor. We drain the canned peas and rinse them under cold water, then add them to the vegetable mixture. We also add a glass and a half of warm water, covering the ingredients with a lid, and let it simmer on low heat for about 15 minutes.

If you have it, you can also add a leftover celery stalk from a previous soup, which will enhance the stew's aroma. After this time, we add the diced zucchini, and finally, we chop fresh parsley or dill and add it to the pot, letting everything simmer for another 10 minutes. It is important to taste the dish before finishing, and if we feel it needs more, we can add salt, pepper, or even a little vegetable seasoning for an even more intense flavor.

Once all the ingredients are well cooked and the flavors have blended perfectly, I recommend removing the celery stalk and the garlic cloves, which will have fulfilled their role in flavoring the dish. Serve this delicious stew hot, alongside a slice of fresh bread or a side of rice. Enjoy your meal!
