We start by preparing the starter, an essential element for obtaining fluffy and airy rolls. In the bowl of the food processor, we bring the lukewarm water to a pleasant temperature that is not hot, so as not to destroy the yeast. We add the sugar, an ingredient that will help activate the yeast, and then sprinkle the dry yeast, which will start to work its magic. Now, we add the four tablespoons of flour, mixing with a spatula or with the processor until the mixture becomes homogeneous. We cover the starter with a clean towel and let it rise for 15-20 minutes in a warm place, where it will begin to double in volume.

Once the yeast is activated and the starter has risen, we return to the food processor. We add the sunflower oil, which will give a pleasant taste and a fine texture to the dough, as well as a beaten egg, which will enrich the mixture. We activate the processor and begin to gradually add the flour until the dough starts to gain consistency. Finally, we add the salt, an essential ingredient that enhances all flavors. We knead the dough for 8-10 minutes until it becomes elastic and slightly sticky. It is important not to overdo it with the flour, as we want our rolls to be fluffy and not hard.

After kneading, we cover the dough and let it rise for 1 hour - 1 hour and a half in a warm place. The dough should double in volume. Once it has risen, we prepare to form the rolls. On a floured work surface, we take out the dough and gently press it to release the accumulated air. We divide the dough into about 10 equal portions, forming balls, which we slightly flatten, thus obtaining a uniform shape. We place them on a baking tray lined with parchment paper, leaving space between them to allow for expansion during baking.

After placing the balls on the tray, we let them rise for another 5-10 minutes. Then, we brush them with egg yolk to give them a golden hue and a shiny texture, and sprinkle sesame or poppy seeds on top, which will add a crunch and flavor. We preheat the oven to 180 degrees Celsius and, once the temperature is reached, we put the tray in the oven. We bake the rolls until they turn golden brown and are nicely colored or until they pass the toothpick test. When they are ready, we take them out of the oven and let them cool slightly. These rolls are perfect to be served alongside various dishes or simply with butter and jam. Enjoy your meal!

 Ingredients: 350 ml water, 600-650 g flour, 1 egg + 1 yolk for brushing, 1 packet of dry yeast (10 g), 1/2 teaspoon salt, 3 tablespoons oil, 1/2 tablespoon sugar, sesame seeds or poppy seeds.
