Spring Pilaf
At the beginning of the green season, nature offers us the most beautiful and precious gifts, all full of vitality and freshness. Besides the flowers that delight our eyes, the greenery is a true source of beneficial substances for health, and our diet should reflect this. In this spirit, I want to present you with a simple yet extremely delicious recipe that showcases the richness of the season.
The first step is to wash the rice in several cold waters, ensuring that the grains are clean. It is important to gently rub the grains with your fingers to remove impurities. We will also prepare the greenery: we choose fresh nettles, wash them thoroughly in several cold waters to clean them of any dirt. In a small pot, we put water with a pinch of salt, and when it boils, we add the nettles. We boil them uncovered for just a minute to preserve their vibrant color and nutrients.
Meanwhile, we take care of the onion. We wash and finely chop it, then sauté it in hot oil until it becomes translucent. The next step is to add the finely chopped ramsons, which we sauté for a few more minutes alongside the onion to release the flavors. Then it’s the turn of the carrot, which we cut into small cubes to integrate perfectly into the dish. We add the blanched nettles, drained of water, and the washed rice. It is important to mention that the liquid in which we boil the rice should be three times the amount of rice, so considering that the nettle juice is not enough, we will also use warm water to complete.
We put the lid on the pot and let it boil for 7 minutes. In the meantime, we wash and finely chop the dill, and at the end, we add it over the rice for an extra flavor. We let the dish boil for another 3-5 minutes, then we take the pot off the heat, allowing the rice to steam in its own vapor.
The result is a delicious dish, full of taste and health, that will delight any taste buds. Once you taste it, you promise you can't stop.
