Pickled Gogonele, Stuffed
This year I decided to fully dedicate myself to cooking at home, transforming into a true master of gastronomy, away from the daily stress. In a creative style, I started experimenting with a goose that I had available. After removing the fat and storing it in a jar, I began to think about how I could use every piece of that delicious bird. One day, inspiration struck me: why not prepare a rare dish, with a combination of flavors and textures that would delight the taste buds?
The first step was to smoke a goose leg, along with other meat parts, for an hour, after marinating it in brine for two days. During this time, the meat absorbed all the flavors, and I began preparations for the stuffing. I took the pickled green tomatoes out of the jar, cut off the top, and hollowed them out, letting them drain well.
The stuffing was a true feast of flavors. I cooked the rice three-quarters of the way in meat broth, adding the broth gradually to allow it to absorb the rich taste. I finely chopped the smoked meat and onion, mixing them with a spoonful of heated goose fat. When the onion became translucent, I added the rice, meat, and some spices like paprika, pepper, and freshly ground coriander, creating a flavorful and hearty stuffing.
After letting the mixture cool a bit, I added sweet cream to achieve a creamy texture, perfect for filling the green tomatoes. I placed them in a greased baking dish with goose fat, adding a few pieces of fat on top for extra flavor. I put them in the oven, where they stayed until the tops of the tomatoes browned and caramelized, giving a crunchy note.
Served with a sweet sauce, these green tomatoes become a true delicacy. I prefer to accompany them with a spoonful of sour cream on one side and a spoonful of honey on the other, reminding me of the flavors of my childhood. Although I occasionally cook with goose, I often choose smoked pork, which proves to be just as delicious.
