When you don't feel like cooking something complicated or you're in a hurry, an omelette with whatever you find in the fridge quickly solves the problem. I've often ended up with this option when I wanted something warm and filling, without thinking too much. I combine exactly what I have on hand, and it turns out different every time, but good. Today I used chicken sausages, a little ham, onion, and bell pepper, all bound with eggs. There's no point in complicating things, especially when hunger doesn't have much patience.

Ingredients

3 eggs
2 small chicken sausages
100 g Prague ham (prosciutto cotto)
1 small onion
half a red bell pepper
6 tablespoons olive oil
salt
pepper

Preparation method

1. Heat a pan with olive oil. You can use a non-stick pan to prevent the omelette from sticking.

2. Slice the sausages into rounds. Cut the Prague ham (prosciutto cotto) into thin strips.

3. Put the sausages and ham in the pan. Let them fry for a few minutes until they are slightly browned. There's no need to stir constantly, but don't leave them unattended.

4. Peel and finely chop the onion. Cut the red bell pepper into small cubes. Add them to the sausages and ham after they have taken on a bit of color.

5. Cover the pan and let it cook on low heat for about 10 minutes until the onion and bell pepper have softened. Stir occasionally to prevent anything from sticking.

6. In a bowl, crack the eggs and beat them well with a pinch of salt and pepper. You can beat them with a fork; a mixer is not necessary.

7. Pour the eggs over everything in the pan. Gently lift the vegetables and meat with a spatula here and there so the egg spreads evenly.

8. Let the omelette cook on low heat, uncovered, until the edges are set and it starts to brown underneath.

9. When the bottom is stable, flip the omelette with a wide spatula. If you can't do it in one move, cut it in half and flip each piece separately.

10. Let it cook on the other side for a few more minutes until it turns golden.

11. Slide the omelette onto a plate. Serve it warm.

This is the kind of omelette you make when you want to quickly take care of a meal and use up leftovers from the fridge. It's filling, doesn't require many special ingredients, and can be easily adapted. Plus, there's almost never anything left on the plate.

Tips and variations

Tips

Don’t turn up the heat too high at the beginning, or the sausages and ham will burn before the onion and bell pepper cook. Stir occasionally while the vegetables are softening.

If you want the omelette to be fluffier, don’t beat the eggs too much and cook everything on low heat.

Substitutions

The sausages can be replaced with any other smoked deli meat or leftover cooked sausages.
Prague ham can be replaced with any other type of cooked ham or even bacon (adjusting the frying time).
If you don’t have red bell pepper, use any kind of bell pepper or even leave it out.

Variations

Add a handful of grated cheese over the eggs before pouring them into the pan.
You can also add other leftover vegetables from the fridge, such as mushrooms or zucchini, just make sure to sauté them well first.
If you want something heartier, increase the number of eggs or add a slice of bread cut into cubes and toasted with the other ingredients.

I heated a pan with oil. I sliced the sausages into rounds and cut the prosciutto into strips and put them to fry. I added the finely chopped onion and pepper and let it cook on low heat with a lid for 10 minutes until softened. I whisked the eggs well with a little salt and pepper. Then I poured them into the pan over the onion, pepper, sausages, and prosciutto. I let it brown nicely on low heat, flipped it, and let the other side become golden before serving on a plate.
