Fluffy Potato Meatballs with Sauce
To prepare a simple and tasty mashed potato, start by choosing quality potatoes, preferably of the "floury" type, which break down easily and provide a fine texture. Peel the potatoes and cut them into uniform cubes for even cooking. Place them in a pot with cold water and a teaspoon of salt, then bring to a boil. Boil the potatoes for about 15-20 minutes until they become soft, but be careful not to overcook them to avoid them breaking apart. Once they are ready, drain them well and using a fork, a masher, or a large grater, mash them until you get a fine puree.
In this puree, add a beaten egg, about 100 grams of grated cheese, salt, and pepper to taste. Mix the ingredients well until you get a homogeneous composition. From this mixture, form balls the size of a ping pong ball. Place them on a greased tray, making sure to leave a little space between them for even baking. Preheat the oven to a high temperature and bake the mashed potato balls for 20-25 minutes, or until they have a golden and appetizing crust.
Meanwhile, prepare the accompanying sauce. In a pan, add the necessary oil and sauté the grated onion until it becomes translucent, adding thinly sliced bell pepper. Season with salt and pepper to taste. Once the pepper starts to soften, add the tomato pulp, mixing well. If you notice that the sauce is too thick, you can add a little water or even white wine for extra flavor. Let the sauce simmer on low heat until it reduces and becomes more concentrated.
Once the potato balls have a golden crust, remove them from the oven and pour the hot tomato sauce alongside them. Sprinkle fresh chopped parsley or rosemary on top, depending on your preferences. Place the tray back in the oven for another 5 minutes so that the flavors combine perfectly. Finally, serve this dish warm, alongside a fresh salad or a side of vegetables, for a delicious and comforting meal.
