To prepare a delicious pizza, it is essential to start with a perfect dough. If you choose to make it at home, the first step is to knead the ingredients: flour, water, yeast, salt, and olive oil. It is important to pay attention to the quantities of yeast and ambient temperature, as these influence the rising time. A general rule is to let the dough rise until it doubles in volume, which can take between 30 minutes and a few hours, depending on environmental conditions. Once the dough has risen, you can stretch it with your hands or a rolling pin, ensuring it has an even thickness.

To prepare the pizza tray, place a sheet of parchment paper, which will help prevent sticking. Drizzle a little olive oil in a zigzag pattern on the paper to add a pleasant flavor and create a crispy crust. Sprinkle a small amount of coarse salt, about 1/4 teaspoon, followed by an even layer of breadcrumbs over the entire surface of the paper. This step is important, as the breadcrumbs will absorb excess moisture from the ingredients to be added.

Now, you can add the vegetables. Slice the onion into thin rings and arrange them evenly on the breadcrumbs. Then, cut the tomatoes in half, with the cut side facing down on the paper. This will allow the tomato juice to seep into the dough and give it an incredible flavor. Meanwhile, preheat the oven to a temperature of 220°-250°C, the highest for most ovens, to ensure even and quick baking.

If you are using store-bought dough, it is already rolled out, so just place it over the vegetables in the tray. If you made the dough at home, stretch it with your hands, shaping the edges and pressing lightly to achieve an airy texture. Bake the pizza on the bottom of the oven for 7 minutes, then move the tray to the top for another 5 minutes to achieve a golden and crispy crust. If you prefer a thicker focaccia, bake for 20-25 minutes, alternating between the two positions in the oven.

When the pizza is ready, remove the tray from the oven and let it cool for 2-3 minutes. Prepare a platter or another tray that you will use for serving and carefully flip the pizza over, removing the parchment paper. If, for any reason, the pizza sticks, you can dampen a clean cloth or a brush with cold water and gently rub the paper, which will help detach it without ruining the dish. Once the paper is removed, the pizza is ready to be served. Enjoy every slice and savor the delicious flavors!
