To prepare a delicious and refreshing dessert, we start by carefully cleaning the stems of the strawberries. It is important to ensure that the fruits are fresh and of good quality. After cleaning the strawberries, we wash them under a stream of cold water to remove any traces of impurities or pesticides. After washing, we let them drain in a colander to eliminate excess water. Once the strawberries have been well drained, we place them in a bowl and mash them with a fork, making sure to achieve a smooth puree, but with a few small pieces to give texture to our dessert.

In another bowl, we take care of the egg whites. We beat them with an electric mixer on high speed until we obtain a stiff and glossy meringue. It is time to ensure that the egg whites are well beaten; a simple test to check the consistency is to turn the bowl upside down. If the meringue doesn’t flow, it means it is ready. We start adding the sugar, spoon by spoon, continuing to mix. This process will help the sugar dissolve completely, and the meringue will acquire a fine and shiny texture.

After incorporating all the sugar, we reduce the mixer speed to low. Now is the time to add the strawberry puree, also spoon by spoon, carefully mixing to avoid breaking the air in the meringue. We continue to mix until the strawberries are perfectly integrated into the mixture, achieving a homogeneous and appetizing blend.

After we finish mixing, we carefully transfer the bowl with the strawberry foam to the refrigerator, letting it cool for a few hours. During this time, the flavors will blend, and the texture will become even firmer. When we are ready to serve the dessert, we take the bowl out of the refrigerator and prepare to decorate it.

For an attractive appearance, we add a few fresh strawberries on top, sliced or whole, to bring a contrast of color and freshness. This strawberry foam is perfect to be enjoyed at a party or as a refreshing dessert on a hot day. The sweet and slightly tangy flavors of the strawberries, combined with the airy texture of the meringue, make this dessert an ideal choice for any occasion. Enjoy!
