To prepare a delicious mozzarella omelette, we start by cracking the eggs into a medium-sized bowl. Here, we add fresh milk, which will give the omelette a fluffy and creamy texture. Next, we season the mixture with salt and pepper to taste, to enhance the flavors. Using a whisk, we will beat the eggs and milk well until we achieve a homogeneous composition of a vibrant yellow color. It is important to ensure that all the ingredients are well incorporated, so the omelette is uniform and flavorful.

Next, we place a small pan over the heat, preferably a non-stick one, and pour in the olive oil. We let the oil heat up, and when it starts to sizzle, it is the ideal moment to pour the egg mixture into the pan. The heat should be low, to allow the eggs to cook evenly without burning. We observe how the edges of the omelette begin to brown, while the center remains liquid.

To prevent burning, using a wide kitchen spatula, we gently lift the edges of the omelette and, at the same time, tilt the pan with our left hand, so that the liquid egg flows underneath the omelette. We continue this process patiently until there is no more liquid on the surface. Once we have a firm base, we carefully flip the omelette to the other side using the spatula, to ensure it cooks evenly.

On one half of the omelette, we place slices of mozzarella, which will melt and add a creamy and savory taste. Gently, we bring the other half of the omelette over the cheese and let it sit on the heat for a few seconds, so that the mozzarella starts to melt. Then, we flip the omelette to the other side to ensure it browns nicely, frying it for a few more seconds.

Once the omelette is ready, we remove it to a warm plate. If desired, we can sprinkle finely chopped parsley or grated parmesan on top for added flavor. This omelette is ideally served alongside a salad of fresh vegetables, composed of juicy tomatoes, crunchy peppers, refreshing cucumbers, and finely chopped onions.
