To prepare a delicious vegetarian pizza, it is essential to start with a dough that is slightly softer than the usual. This will provide a finer and crispier crust, perfect for supporting the flavorful ingredients you will use. The pesto can be made from fresh basil, pine nuts, garlic, parmesan, and olive oil, all blended to obtain a fine paste. Once you have covered the dough with the pesto sauce, it is time to add the vegetables. Opt for a variety of colorful vegetables, such as red peppers, zucchini, eggplant, and red onion, all thinly sliced to bake evenly. Make sure to distribute the ingredients evenly on the pizza, so that each bite is full of flavor.

Another essential ingredient is telemea cheese, which adds a salty and creamy note to the dish. Crumble the telemea over the vegetables, making sure to cover it evenly. Now, the pizza is ready for the oven! Preheat the oven to 390°F (about 200°C) and place the pizza tray inside. Bake the pizza until the crust starts to turn slightly brown and the ingredients are cooked, about 15-20 minutes, depending on your oven.

If you are using a perforated baking tray, it is not necessary to grease it with oil, as the air circulates well and prevents sticking. However, if you are using a regular tray, it is recommended to grease it with a splash of olive oil to avoid any issues when serving. Once baked, cut the pizza into slices and serve it warm, alongside a portion of pasta or a glass of good wine, for a complete culinary experience.
