To make this delicious Dobos cake recipe, it is essential to have all the necessary ingredients at hand and to organize yourself well to achieve a worthy result. We start by preparing the layers. In a large bowl, beat 280 grams of sugar with 12 egg yolks using a mixer or spatula. It is important for the sugar to dissolve completely in the yolks, resulting in a creamy and fluffy mixture. Once you have achieved a smooth texture, gradually add 200 grams of flour, mixing carefully not to deflate the dough. Finally, fold in the beaten egg whites gently, so as to keep the air in the mixture.

Prepare the tray by greasing it with oil to prevent the layers from sticking. Roll out the dough into thin sheets patiently, aiming to get 8-10 sheets, depending on how thin you can roll them. Bake the sheets on the back of the tray until they turn golden and slightly crispy. As you take each sheet out of the oven, sprinkle a little flour between them to avoid sticking.

Next, we move on to preparing the cream. In another bowl, mix 400 grams of butter with 150-175 grams of powdered sugar until it becomes a creamy mixture. Gradually add the 4 egg yolks, one at a time, mixing well after each addition. Incorporate cocoa, about 75-85 grams, as well as pure vanilla and rum, to taste. To cut the intense flavor of the butter, you can also add a bit of Nutella, which will enhance the flavor.

After baking the sheets, spread an even layer of cream on each sheet, except for the most beautiful sheet which you will keep for decoration. This will be covered with caramelized sugar. To prepare the caramelized sugar, put 150 grams of sugar in a saucepan and leave it on the heat, stirring constantly, until it turns dark brown, being careful not to burn it. When the sugar is ready, carefully pour it over the sheet placed on the metal tray.

Once the sugar has cooled and hardened, use a heated knife to portion the cake, marking the slices without cutting all the way through. Place the cake in the refrigerator to firm up well. Finally, use the remaining cream to decorate the outside of the cake, ensuring that the edges are cut evenly for a neat appearance. This Dobos cake is not only a delight but also a true visual feast, perfect for impressing guests on any special occasion.
