- 200 ml warm milk
- 100 g melted butter
- 100 g sugar
- 3 eggs (2 for the dough and 1 for brushing)
- 25 g fresh yeast
- A pinch of salt
- Grated zest of one lemon (optional)
For the filling:
- 400 g Focsani cheese (or well-drained cottage cheese)
- 2 eggs
- 100 g sour cream
- 50 g sugar (or to taste)
- One teaspoon of salt
- Vanilla essence or lemon zest (optional)
Preparation:
1. Activating the yeast:
In a small bowl, dissolve the yeast in warm milk, adding a teaspoon of the 100 g of sugar. Let the mixture sit for 10 minutes until it becomes frothy. This step is essential to activate the yeast, ensuring your pastry will rise beautifully.
2. Preparing the dough:
In a large bowl, combine the flour, remaining sugar, and salt. Make a well in the center and add the yeast mixture, the two beaten eggs, and the melted butter. If you choose to use lemon zest, now is the time to add it. Knead the dough for 10-15 minutes until it becomes elastic and smooth. It can be a satisfying activity, and the smell of fresh dough will fill the kitchen!
3. Rising the dough:
Form a ball from the dough, lightly oil it, and place it in a clean bowl covered with a damp towel. Let the dough rise in a warm place, away from drafts, for about 1 hour or until it doubles in size.

Meanwhile, prepare the filling. In a bowl, combine the well-drained Focsani cheese (or cottage cheese), the two eggs, sour cream, sugar, and salt. Mix well until you obtain a homogeneous composition. If desired, you can add vanilla essence or lemon zest for extra flavor.
5. Assembling the pastry:
After the dough has risen, divide it into two equal parts. Roll out the first part into a thin sheet and place it in a greased baking tray. Add the cheese filling, leveling it evenly. Roll out the other part of the dough and place it on top of the filling. You can make a few cuts on top to allow steam to escape during baking.
6. Baking:
Preheat the oven to 180 degrees Celsius. Brush the surface of the pastry with beaten egg to achieve a golden and appetizing crust. Bake the pastry for 45-50 minutes or until it turns golden and easily separates from the edges of the tray. This is an essential step, as a well-baked pastry will have a perfect texture.
7. Cooling and serving:
