Step by step: Preparing the cake
1. Preparing the base:
The first step is to prepare the base, which will be the foundation of this delicious dessert. Start by separating the egg whites from the yolks. In a large bowl, beat the egg whites with a pinch of salt until frothy, then gradually add the sugar, continuing to beat until it completely dissolves. It is important to use a quality mixer, as well-beaten egg whites will give your cake an airy texture.
Then, gradually add the yolks, hot water, and oil, mixing continuously. These ingredients add moisture and richness to the base. Finally, fold in the flour mixed with baking powder and ground walnuts, using a spatula to avoid losing air from the mixture.
Pour the mixture into a baking tray lined with parchment paper and place it in a preheated oven at 175 degrees Celsius for 30-35 minutes. Check if it is baked using a toothpick – if it comes out clean, the base is ready. Remove it from the oven and let it cool on a rack.
2. Chocolate cream:
While the base cools, you can prepare the chocolate cream. In a saucepan, mix the liquid cream with the sugar and let it boil for 2-3 minutes. Move on to the next step with the chocolate. Cut the chocolate into small pieces and add it to the hot cream mixture. Stir well until the chocolate completely melts, then let the mixture cool in the fridge until the next day. The next day, whip the cream on high speed until it becomes fluffy and airy.
3. Caramel cream:
For the caramel cream, caramelize the sugar until it turns golden. This is a crucial moment, so be careful not to burn it. Once the sugar is caramelized, carefully add water, as it will create hot steam. Let it simmer until the caramel melts. In another bowl, mix the egg with the 3 tablespoons of sugar, add the flour, then the sugar syrup. Place the mixture over low heat and stir constantly until it thickens. Remove from heat and add the butter, mixing until it melts. Let it cool.
4. Assembling the cake:
Once all components are ready, it's time to assemble the cake. Cut the base into three equal parts. The syrup set aside will be diluted with water. Soak each layer of the base with this syrup, then place the first layer on a serving platter. Spread with chocolate cream, followed by the second layer, which will be spread with caramel cream. Place the last layer on top, lightly soaking it.
5. Preparing the glaze:
To finish the cake, prepare the glaze: melt the liquid cream with the dark chocolate and powdered sugar in a double boiler, stirring continuously until smooth. Let the glaze cool slightly, then pour it over the cake. Sprinkle roasted walnuts on top for added texture, then let the cake chill in the fridge for at least 2 hours or, ideally, until the next day.
Serving suggestions:
This cake pairs perfectly with a cup of strong coffee or an aromatic tea. You can also serve it with a dollop of natural cream or vanilla ice cream for a delicious contrast of temperatures.
