Fluffy Donuts
To prepare the most delicious and fluffy donuts, we start by making a dough starter with yeast, milk, and two tablespoons of sugar. In a bowl, we mix the yeast with warm milk and sugar, letting the mixture rise for about 15-20 minutes until it becomes frothy and doubles in volume, forming those appetizing bubbles. This is the base of our donuts, and the activated starter will ensure that the donuts are fluffy and airy.
Once the starter has risen, we prepare the rest of the ingredients. In a larger bowl, we sift the flour to aerate it, add salt, the remaining sugar, eggs, lemon zest, and lemon essence. This combination will give the donuts an intense aroma and a special taste. We start to gradually pour in the sparkling water, continuously mixing to avoid lumps. It is important to knead the dough well until it becomes elastic and homogeneous, and at the end, small bubbles form indicating that the dough is ready. This kneading process can take between 10 and 15 minutes.
Once the dough is well kneaded, we cover it with a clean towel and let it rise for 30 minutes in a warm place. During this time, the dough will double in volume and become fluffy. After it has risen, we sprinkle flour on the work surface and roll out the dough to a thickness of about 1.5 cm. Using a round cutter or the rim of a glass, we cut out circles of dough. These will be the base of our donuts, and the leftover dough can be re-rolled to make even more delicious donuts.
We place the cut circles on a floured tray and let them rise for another 20 minutes. In the meantime, we prepare for frying. In a deep pan, we heat the oil well so that the donuts fry evenly. Once the oil is hot, we fry the donuts on both sides until they become golden and browned. It is important not to overcrowd the pan so that the donuts fry evenly.
Once they are ready, we remove the donuts onto an absorbent towel to eliminate excess oil. Finally, we generously dust the donuts with powdered sugar, and they are ready to be enjoyed. The flavors of lemon and the sweetness of the powdered sugar combine perfectly, creating an irresistible dessert.
