To prepare a delicious stew, we start by cutting the meat into smaller pieces for even cooking and to absorb all the flavors. I recommend using pork or beef, depending on preferences, but we must ensure it is tender meat. The onion is finely chopped, and the peppers are seeded and sliced into thin strips to bring a pleasant texture to the dish. Garlic, an essential ingredient, can be finely chopped or, for a more intense flavor, pressed through a garlic press.

In a spacious pot, we heat 100 ml of oil, preferably sunflower or olive oil, over medium heat. We add the onion and garlic, sautéing them until they become golden and aromatic. This is the stage where the flavors begin to develop, and the entire kitchen will be filled with an enticing aroma. We add the cut meat and let it brown well on all sides to seal in the juices.

Once the meat has started to form a nice crust, we add the sliced peppers and continue to sauté everything together for a few seconds to allow them to release their aroma. Next, we pour in 100 ml of broth, which will add color and a rich taste to the dish. We season with salt, pepper, and thyme, adding a note of freshness and an aromatic fragrance.

We add enough water to cover the meat, then cover the pot with a lid and let it simmer on low heat. It is important to check from time to time, and if we notice that the meat is not tender enough, we can add a little water. We cook until the liquid reduces, leaving a thicker sauce that will coat each piece of meat.

Before serving, we sprinkle freshly chopped green parsley on top, which will add a note of freshness and color. We let it come to a final boil, and then the stew is ready to serve. It is delicious both with a polenta, which would be the perfect complement, but it can also be enjoyed with mashed potatoes, as I chose. This recipe is ideal for a family meal or with friends, bringing not only a wonderful taste but also unforgettable moments with loved ones.

Ingredients: 500 g of free-range chicken, 2 red bell peppers, 3 cloves of garlic, 2 medium onions, 100 ml of tomato paste, 1 teaspoon of thyme, salt, pepper, green parsley (I used dried, 1 teaspoon), 100 ml of oil.
