To prepare a delicious plum tart, we start by gathering the necessary ingredients and utensils. A 28 cm tart pan is lined with baking paper, ensuring it lays evenly to prevent the dough from sticking. The tart dough can be made at home or purchased, depending on preferences and available time. Once we have the dough at hand, we carefully roll it out in the pan, ensuring it is evenly distributed on the bottom and sides of the pan. It is important that the dough is well rolled out so that it does not retract during baking. After placing the dough, we use a fork to prick it evenly, which will allow steam to escape during baking and prevent bubbles from forming.

We continue with the plums, which are the stars of this dessert. If using frozen plums, they can be placed directly in the pan. I opted for syrup-soaked frozen plums, which add a natural sweet flavor, so there is no need to add extra sugar. If you prefer fresh plums, it is essential to carefully wash them, cut them in half, and mix them with sugar, letting them sit for about 30 minutes. This process will allow the sugar to dissolve and draw out the juice from the plums, creating a delicious mixture.

Next, we take care of the creamy composition of the tart. In a bowl, we beat the eggs well with the sugar until it completely melts, and the mixture becomes homogeneous. Then we add the sour cream, which will bring a fine and creamy texture. This composition is carefully poured over the plums arranged in the pan. It is important that the plums are evenly distributed so that each slice of tart has a balanced portion of fruit and cream.

After preparing the tart, we place it in the preheated oven at a medium temperature. We bake the tart until the composition becomes firm and has a consistency similar to that of a pudding. Usually, this process takes between 30 and 40 minutes, but it is good to check it periodically. When the tart is ready, we take it out of the oven and let it cool at room temperature. After it has cooled, we put it in the fridge to firm up well and reveal all the flavors. Served cold, the plum tart will be a true delight, perfect for ending a meal or to be enjoyed alongside a cup of tea.
