- 300 g sour cream (Covalact 15% fat)
- 500 ml vegetable whipped cream (Hulala, based on vegetable fats)
- 300 g yogurt cream
- 300 g sweet cottage cheese
- 2 tablespoons lemon juice
For the syrup:
- 2 tablespoons rum (essence or drinking rum)
- 2 tablespoons Amaretto
- 2 packets instant coffee
- 1 packet Bourbon vanilla flavor
- 3-4 tablespoons sugar (depending on preferences)
- Still water (up to 250 ml)
For assembly:
- 20 champagne biscuits
- Red grape berries (about 1 bunch, with large and firm berries)
Preparation steps
Step 1: Preparing the yogurt cream
1. In a large bowl, combine the yogurt with the 6 tablespoons of brown sugar and the 2 tablespoons of lime juice. Mix well until you obtain a homogeneous composition.
2. Add the sour cream and sweet cottage cheese, mixing carefully to avoid lumps. This mixture will be the base of your delicious cream.
3. In another container, soak the gelatin in 150 ml of cold water for 5 minutes. Then, gently heat the gelatin until it completely dissolves, being careful that it is not hot when adding it to the yogurt cream.

2. Once the yogurt cream has cooled, add the whipped cream to the yogurt mixture, being careful to fold it in gently from the bottom up to maintain the airiness.
Step 3: Preparing the syrup
1. In another bowl, combine the rum, Amaretto, instant coffee, vanilla flavor, and sugar. Add still water until you reach a total of 250 ml. Mix well until the sugar completely dissolves.
2. Allow the syrup to cool.
Step 4: Assembling the cake
1. Place the vanilla sponge on a platter. You can cut it in half if you want to make a two-layer cake, but this is optional.
2. Soak the sponge with the prepared syrup. Use a brush or a spoon to distribute the syrup evenly.
