Using your fingertips or a mixer, combine the butter with the dry ingredients until you achieve a sandy mixture. Next, add the egg yolks and powdered sugar. Knead the dough well until it becomes smooth and homogeneous. It is important not to over-knead, as this will result in a texture that is too dense.
Once the dough is ready, wrap it in plastic wrap and refrigerate for at least 30 minutes. This resting time will allow the ingredients to combine perfectly and will make shaping the cookies easier. After the time has passed, divide the dough into small pieces, each weighing about 14-15 g. Shape each piece into a ball, ensuring they are all of uniform size for even baking.

This chocolate filling will give the cookies a decadent taste. Fill each indentation made earlier with warm chocolate, being careful not to overfill to avoid spills. Let the cookies cool completely, and the chocolate will harden, forming a delicious crust.
