Step-by-step instructions
Step 1: Marinating the meat
1. Start by preparing the Food Saver container for marination. This will become your ally in the quick marination process.
2. Rinse the lamb shoulder slices well under cold running water and dry them with a paper towel.
3. In a bowl, combine salt, lemon pepper, Hot & Spicy seasoning, and Herbes de Provence. These spices will give the meat a vibrant flavor.
4. Crush the garlic cloves and mix them with olive oil, mustard, and Greek yogurt to form a smooth mixture. This will help the flavors penetrate the meat.
5. Rub the meat pieces on both sides with the spice and marinade mixture. Ensure every inch is covered.
6. Place the meat in the Food Saver container, add the lemon zest, slices of chili pepper, pepper, and the sprig of rosemary. Cover with the container lid.
7. Rotate the container button to the marination position and connect it to the vacuum machine. Press the vacuum button and repeat twice for optimal marination.
Step 2: Baking the meat
1. After vacuuming, seal the container and place it in the refrigerator for at least 15 minutes (ideally 30 minutes).
2. Preheat the oven to 200 degrees Celsius.
3. After the marination period, remove the meat from the container and place it in a ceramic dish. Add the vegetable broth and balsamic vinegar.
4. Cover the dish with aluminum foil and place it in the oven. Bake for one hour, then remove the foil and reduce the temperature to 180 degrees Celsius. Allow to continue baking for another 20-30 minutes, until the meat becomes tender and juicy.
Step 3: Preparing the mushroom and gorgonzola sauce
1. In a pan, add a little oil and sauté the finely chopped green onions until they become translucent.
2. Add the mushrooms and continue cooking until they soften. If using canned mushrooms, ensure they are well-drained before adding.
3. Sprinkle the flour and mix well, allowing it to cook slightly to eliminate the raw flour taste.
4. Add the sour cream and water, stirring continuously until you achieve a creamy sauce. Season with salt and pepper.
5. Finally, add the gorgonzola cut into cubes and stir until completely melted.
Step 4: Assembling and serving
1. Once the meat is ready, remove it from the oven and place it on a platter.
2. Pour the mushroom and gorgonzola sauce over the meat, ensuring each piece is well covered.
3. Serve hot, alongside a fresh salad or mashed potatoes to complete the meal.
Useful tips
- Marination: Marinating the meat for a longer period (up to 24 hours) will intensify the flavors and make the meat even more tender.
- Variations: Instead of gorgonzola, you can use feta cheese or goat cheese for a different taste.
- Recommended beverages: This dish pairs excellently with a dry red wine, such as Cabernet Sauvignon or Merlot, which will complement the spicy flavors of the meat.
- Calories and nutritional benefits: A serving of lamb shoulder contains approximately 350-400 calories. Lamb meat is an excellent source of protein, zinc, and B vitamins, essential for immune system health.
