To make a pizza with a special taste, we will start by preparing the dough. Sift 500 grams of wheat flour into a large bowl. This step is essential as it helps to aerate the flour, giving the dough a fluffy texture. In the center of the flour, add 10 grams of dry yeast, 1 teaspoon of sugar, and 1 teaspoon of salt. These ingredients will activate the yeast and enhance the flavor of the dough. In another container, mix 300 ml of lukewarm water with 2 tablespoons of extra virgin olive oil, then pour the mixture over the dry ingredients.

Using a spatula or your hands, begin to incorporate the flour into the liquid until you obtain a dough that pulls away from the sides of the bowl. Then, transfer the dough to a floured work surface and knead for about 10 minutes until it becomes elastic and smooth. Place it in an oiled bowl, cover it with a damp towel, and let it rise in a warm place for about an hour, or until it has doubled in size.

Meanwhile, prepare the filling. Cut a bell pepper into thin strips and prepare 200 grams of mozzarella to grate. Once the dough has risen, line a 28 cm diameter cake pan with parchment paper and grease it with a bit of olive oil. Divide the dough into two equal parts. Roll out the first half of the dough in the cake pan, ensuring it is pushed well against the sides.

On top of the rolled-out dough, add the three skinless sausages, broken into small pieces, and the strips of bell pepper. Sprinkle grated mozzarella over the filling. Then, roll out the other half of the dough on top, pricking it with a fork to allow steam to escape during baking.

In a separate bowl, mash 400 grams of tomatoes in their juice well. Add a splash of mozzarella, grated parmesan to taste, a pinch of dried oregano, and a tablespoon of olive oil. Mix well and pour the mixture over the dough in the pan.

Preheat the oven to 200 degrees Celsius and bake the pizza for about an hour, or until the dough is golden and crispy. After baking, let the pizza cool slightly before slicing it. It can be enjoyed both warm and cold, making it perfect for a delicious snack. Enjoy your meal!
