Easter baskets
Every year, at the Easter table, I make these little baskets from tomatoes filled with cheese. They don't require complicated ingredients, don't take much time, and look colorful on the platter. For me, the preparation is quite simple – cutting tomatoes, mixing cheese with sour cream, a little play with decoration, and the appetizers are ready. The kids are immediately attracted by their appearance and they disappear quite quickly from the table.

Ingredients
6 medium tomatoes (not too big, not too small)
200 g telemea cheese
300 g sour cream
bell pepper (enough to cut strips for handles)
cucumber
parsley
carrot (for decoration, in the shape of small flowers)
Preparation method
1. Wash the tomatoes and gently dry them with a towel. Cut a thin cap from the top of each tomato. With a teaspoon, scoop out the insides without puncturing the skin. I prefer to turn them upside down on a napkin for a few minutes to drain the juice.
2. Grate the telemea cheese on a large grater. Mix it with the sour cream until you get a smooth mixture. If the cheese is very salty, taste and adjust at the end according to your preferences. It should be creamy enough to easily fill the tomatoes but not runny.
3. Fill each tomato with the cheese mixture using a teaspoon. Don't press too hard to avoid cracking the skin.
4. Cut the bell pepper into thin strips, long enough to be inserted as "handles" for the basket. Gently fix them into the cheese mixture on each tomato.
5. For decoration, add parsley leaves alongside or on top of the filling and thin slices of cucumber. Cut the carrot into slices and form simple flowers – I use a small knife with a sharp tip, but a fruit cutter works too.
6. Arrange the baskets on a platter, being careful not to knock off the decorations.

These appetizers are quick, don’t require cooking, and can be made a little while before serving. I like that the ingredients are simple and easy to find. The recipe is perfect for meals with many guests, and I don't stress about oven times or heat.

Tips
The tomatoes should be firm. If they are overripe, they will soften quickly and won't hold the filling well.
If you want the cheese to mix easier, let it sit at room temperature for 10 minutes before grating.
The insides of the tomatoes can be saved for other recipes (sauces or salads).
Substitutions
You can use any type of salty cheese (for example, feta) if you don't have telemea.
Sour cream can be replaced with Greek yogurt for a lighter texture, but the taste will be tangier.
For handles, you can also use kapia peppers or even thin celery stalks.
Variations
In the cheese mixture, you can add finely chopped greens (dill, green onions) to taste.
For decoration, you can use sliced radishes, slices of olives, or small pieces of boiled egg.
If you want spicy variations, mix a pinch of pepper or chopped hot pepper into the cheese.

Place the baskets on a bed of green salad for a more colorful look.

There’s no need to blanch the carrot. If it’s fresh and cut thinly, it can be easily sculpted and looks good for decoration.
