Cheese pie with sweet cheese and sour cherries
To prepare a delicious cherry and cottage cheese cake, we will follow a few essential steps that will help us achieve a savory and attractive dessert. We start by draining the cherries and cottage cheese in a fine strainer, ensuring we eliminate the excess liquid. This is an important step as it will help us avoid a cake that is too moist.
After we are done with the cherries and cottage cheese, we turn our attention to the soft butter. We beat it together with 100 g of sugar until we obtain a fluffy and airy mixture. It is crucial to ensure that the butter is at room temperature so that it integrates perfectly into the mixture. Then, we add the vanilla sugar and lemon juice, continuing to mix until the cream becomes smooth and fragrant.
We separate the eggs, being careful to use only the egg whites and yolks. We start incorporating the yolks, one by one, into our butter cream, mixing constantly to achieve a fine texture. In a separate bowl, we combine the semolina with the baking powder and vanilla pudding, mixing well to ensure that the ingredients are evenly distributed. We will slowly incorporate this dry mixture into the butter cream, mixing with a spatula to avoid losing air from the composition.
We will beat the egg whites separately with the remaining sugar until a firm and glossy foam forms. This foam will give our cake a light and fluffy texture. After we have obtained the foam, we will add the cherries, cottage cheese, and egg white foam to the butter cream, mixing carefully to avoid damaging the aeration.
Meanwhile, we prepare the oven, setting it to 175 degrees Celsius. We choose a 26 cm diameter souffle dish, which we grease with butter or line with baking paper. We pour the obtained cream into the dish, ensuring we distribute the mixture evenly. We bake the cake for about 70 minutes, or until it becomes golden and firm to the touch.
After baking, we let the cake cool for 30 minutes in the dish, which will help stabilize it. Before serving, we sprinkle a little powdered sugar on top to give it an elegant appearance and enhance the sweetness.
