To prepare these delicious dough sheets, start by gathering all the dry ingredients. In a large bowl, mix 500 g of flour, 1 teaspoon of salt, and 1 tablespoon of baking powder, making sure they are well combined. This mixture will form the base of your dough. Next, add 2-3 tablespoons of olive oil, which will provide extra flavor and help achieve a fine texture. After incorporating the oil, begin to gradually add warm milk, approximately 250 ml. It is important that the milk is warm, as this will activate the ingredients and help the dough become elastic.

Knead the dough vigorously, either using a mixer fitted with a kneading hook or by hand. If you choose to knead by hand, make sure to use all your strength, as the dough needs attention to become homogeneous and elastic. When the dough has gathered into a smooth ball, check the texture; if it seems too hard, do not hesitate to add 1-2 tablespoons of milk to adjust the consistency.

Once the dough is ready, place it in a bowl greased with a little oil and cover it with plastic wrap. Let it rest for 20 minutes to allow the gluten to relax. This is a crucial step, as it will facilitate the subsequent rolling out of the dough. After 20 minutes, divide the dough into four equal balls. Cover them again with plastic wrap and let them rest for another 10 minutes.

While you wait, prepare your work surface. Sprinkle a little flour or grease it with oil to prevent the dough from sticking. Take one of the dough balls and start rolling it out with a rolling pin, being careful to achieve a sheet as thin as possible, about 1 mm thick. The dough is very elastic and will roll out easily. Use a cutter or a bowl to cut the dough into circular shapes.

Heat a non-stick pan over medium heat. My pan has a diameter of 36 cm, and the dough will shrink a little during baking, so place the dough circles carefully in the pan. Let each piece cook for about a minute on each side, until it puffs up and forms small bubbles. Cover them with a clean towel to prevent drying out. If you have made several sheets, you can easily freeze them so that you have them on hand whenever you want to enjoy them. These sheets are ideal for serving with various fillings or as a side dish to different dishes.
