The white gelatin is hydrated with two tablespoons of cold water, allowing it to absorb the liquid for about 5-10 minutes until it becomes soft and fluffy. This is the essential step to achieve the perfect jelly texture. Meanwhile, we take care of the red gelatin. We mix it with two teaspoons of sugar and two teaspoons of cold water, so that the sugar dissolves evenly. Once the white gelatin has hydrated, we add it to the red gelatin mixture and stir well, ensuring that no lumps remain. This combination will give the jelly an intense flavor and a vibrant color.

In a saucepan, we put the coffee together with the sugar. It is important to use quality coffee, preferably freshly brewed, to achieve a richer taste. We keep the heat low, stirring occasionally, until the sugar completely melts. Once the sugar has dissolved, we add the hydrated gelatin. We continue to stir gently, being careful not to form air bubbles, and when the coffee starts to boil, we remove the saucepan from the heat. It is essential not to let the mixture boil too long, as the gelatin can lose its gelling properties.

We prepare the jars in which we will pour the warm jelly. Make sure they are well sterilized to prevent any contamination risks. Carefully pour the coffee jelly into the prepared jars, leaving a little space at the top for expansion, as the jelly will continue to set as it cools. Once we have filled all the jars, we let the jelly cool to room temperature, then transfer it to the refrigerator to set completely. This process can take between 4-6 hours, so be patient.

After the jelly has set, we can enjoy it as is or use it as an ingredient in a more elaborate dessert. This coffee jelly is ideal to be served with a dollop of whipped cream on top or alongside a scoop of ice cream. It is a delight that combines the intense flavors of coffee with the sweetness of gelatin, offering an unforgettable culinary experience.
