- Powdered sugar for decoration

Preparation method:
1. Preparing the apricots: Wash the apricots well under cold water, then cut them in half and remove the pits. If you wish, you can also use dried or frozen apricots, but the taste will be different.
2. Preparing the dough: In a large bowl, combine the cottage cheese with the egg, sugar, vanilla essence (if you chose to use it), and a pinch of salt. Mix well until you obtain a smooth mixture. Then, add the flour and baking powder, mixing gently with a spatula until fully incorporated. The dough should be soft but not sticky.
3. Forming the dumplings: On a lightly floured surface, take a portion of the dough and flatten it with your hands. Place half an apricot in the center and wrap the dough around it, forming a ball. Make sure the apricot is well covered by the dough so it doesn't come apart during boiling.
4. Boiling the dumplings: In a large pot, bring water with a pinch of salt to a boil. When the water is boiling, carefully add the dumplings, being careful not to overcrowd the pot. Boil them for 5-7 minutes, until they rise to the surface. This is a sign that they are ready!
