Stuffed Cabbage Rolls: A Traditional Recipe with Flavors that Embrace Your Soul

There is nothing more comforting than a plate of steaming stuffed cabbage rolls, full of taste and memories. This recipe for stuffed cabbage rolls is a true feast, perfect for festive meals or any special occasion. Each bite takes us back to ancient traditions, to moments spent with loved ones, and the inviting aroma of meat and pickled cabbage will make you feel at home.

Preparation time: 30 minutes
Cooking time: 2 hours and 30 minutes
Total time: 3 hours
Servings: 8 servings

Ingredients:

- 2 large pickled cabbages, to detach the leaves
- 1 kg minced pork, for a rich and juicy flavor
- 3-4 small smoked sausages, for extra flavor
- 3-4 pieces of smoked meat (e.g., pig tail), for an authentic taste
- 3 onions, essential for adding sweetness
- 1 cup of selected and washed rice, for consistency
- 2 tablespoons of tomato juice, ideally homemade
- Salt, pepper, and thyme, to season the flavors

Preparing the stuffed cabbage rolls:

1. Rinsing the cabbage: Start by rinsing the pickled cabbage leaves under cold running water. This step is important to reduce saltiness and sourness, so the rolls do not become too salty.

2. Preparing the filling: Finely chop the onions and sauté them in a little oil in a pan until golden. Once the onion is sautéed, add the washed rice and half a cup of water. Stir constantly to prevent the rice from sticking. After about 2-3 minutes, when the water has evaporated, add the two tablespoons of tomato juice. Mix well, then transfer the rice mixture over the minced meat. Combine everything, seasoning with salt, pepper, and thyme.

3. Wrapping the rolls: Take a cabbage leaf and place a tablespoon of the meat and rice mixture at the bottom of the leaf. Roll tightly, then fold the edges to prevent the filling from escaping. Continue until the filling is finished.

4. Cooking the rolls: In a larger pot, grease the bottom with a little oil and chop some pickled cabbage at the bottom. Place the rolls one by one, alternating with a few pieces of smoked meat and a sausage. Cover the rolls with another thin layer of finely chopped cabbage. Add the juice from the pickled cabbage or water, depending on how salty it is. Cover the pot with aluminum foil or a lid and place it on medium heat. Once it starts to boil, reduce the heat to low.

5. Boiling: Let the rolls boil for 2 hours. It is important to add water occasionally if necessary and to gently move the pot back and forth to prevent the cabbage from sticking to the bottom.

6. Finishing: Mix 2-3 tablespoons of broth with a little water and pour it over the rolls (or you can add half a cup of tomato juice). Let them boil without a lid for another 30 minutes, then turn off the heat.

Serving: The rolls are served hot, alongside warm polenta, hot peppers, and a teaspoon of sour cream or yogurt, to perfectly complement this traditional dish.

Practical tips:

- My advice is to choose a quality pickled cabbage, preferably homemade, as this will greatly influence the final taste of the rolls.
- You can experiment with different types of meat, such as beef or chicken, depending on your preferences.
- If you like a spicier taste, add a finely chopped hot pepper to the filling.
- Don't hesitate to try adding some spices, such as paprika or dill, for an extra flavor.

Nutritional benefits: Stuffed cabbage rolls are an excellent source of protein due to the meat and rice, while pickled cabbage provides vitamins and beneficial probiotics for digestion. This dish is filling, but can be enjoyed in moderation, especially if you are mindful of the portions of polenta and sour cream.

Frequently asked questions:

1. Can I use fresh cabbage instead of pickled cabbage?
Answer: Although traditionally stuffed cabbage rolls are made with pickled cabbage, you can use fresh cabbage, but you will need to blanch it first to make it more flexible.

2. How can I store the rolls for the next day?
Answer: The rolls store well in the fridge in an airtight container. They can be reheated on the stovetop or in the oven, adding a little water to prevent drying out.

3. What other dishes can be combined with stuffed cabbage rolls?
Answer: Stuffed cabbage rolls pair very well with polenta, but also with mashed potatoes or a pickled salad.

Personal story: My memories of stuffed cabbage rolls are tied to winter days when the whole family gathered around the table, and the aroma of the rolls simmering on the stove made us feel at home. There was never too much cabbage, too much meat, or too much polenta, because love and warmth in the kitchen were the main ingredients. So I encourage you to share this recipe with your loved ones and create your own culinary memories. Enjoy your meal!
