To create a delicious and flavorful dish, we will prepare a special main course based on shrimp and fresh vegetables, accompanied by fluffy couscous. We start by preparing the necessary ingredients: 3-4 cloves of garlic, one medium zucchini, 2-3 ripe tomatoes, 300 g of thawed shrimp, 200 g of couscous, olive oil, salt, pepper, and fresh parsley.

The first step is to finely chop the garlic, and then head to the pan. We add 3 tablespoons of olive oil and heat the pan over medium heat. Once the oil is hot, we add the chopped garlic and sauté it lightly, being careful not to burn it, as this can give it a bitter taste. As soon as the garlic turns golden, we add water to prevent it from burning.

Meanwhile, we take care of the vegetables. We grate the zucchini on a coarse grater and dice the tomatoes. We add both ingredients to the pan and sauté them over medium heat, stirring occasionally. It is important that the vegetables do not become overcooked but remain slightly crunchy to preserve their texture and flavor.

When the vegetables are almost done, we add the shrimp, which should be peeled and deveined. We let everything cook over medium heat for 8-10 minutes. It is recommended to add a little water at this stage so that the sauce is rich and not too dry. Finally, we remember to season with salt and pepper to taste to enhance the flavors.

Now we take care of the couscous. We put water with a pinch of salt on the heat, and when it starts to boil, we turn off the heat. We add the oil and couscous, mix well, and cover with a lid, letting it sit for about 5 minutes. After this time, we use a fork to fluff the couscous, achieving a fluffy texture.

In the end, we take the couscous and add it to the pan over the shrimp and vegetable mixture, mixing everything well so that the flavors combine perfectly. We sprinkle fresh chopped parsley on top, which will add a touch of freshness and color to our dish. Serve warm and enjoy a delicious and healthy meal!
