Croustades Appetizers_ Pasta Cups
To prepare these delicious bread baskets filled with salmon, we need to ensure that each step is done carefully to achieve a tasty and attractive result. We start by choosing a quality bread, preferably a baguette or homemade bread, which will add extra flavor. The slices of bread are rolled out using a rolling pin or, as I did, just with our fingers, to make them thinner and more flexible. Once we have perfectly rolled out the slices, we cut them into the desired shapes, whether they are circles, flowers, or other creative forms, depending on the occasion.
After cutting the slices, we carefully place them into the muffin tin molds, making sure they fit well against the bottom and sides. Brushing with melted butter is an essential step, as it will provide a golden and crispy crust. Then, to ensure even baking, we place another muffin tin on top. This method helps the baskets keep their shape during baking. Baking is done at a high temperature of 200 degrees Celsius (approximately 400 degrees Fahrenheit) for 10 minutes, or until they become golden and crispy.
Once the baskets have cooled, we can store them in an airtight container, where they can remain fresh for up to two weeks. Now let’s focus on the salmon filling. For this, we will boil the salmon in a pot of salted water, making sure it is skinless before cooking. Once the water starts to boil, we add the salmon and let it boil for a few seconds. As soon as the water returns to a boil, we remove the pot from the heat and let it cool completely. After the salmon has cooled, we dry it on a paper towel and break it into small pieces, so it can be easily distributed in the baskets.
In each basket, we put a teaspoon of mayonnaise seasoned with salt and pepper, mixed with chopped dill, which will add a fresh and aromatic taste. Then, we poke the pieces of salmon into the mayonnaise, ensuring they are well distributed. Finally, we garnish with fresh dill leaves or, depending on preferences, with freshly chopped garlic leaves, which add a distinct note. This combination of flavors and textures transforms the baskets into an absolute delight, perfect for any occasion!
