1. Preparing the vegetables: Start by washing the eggplants, zucchinis, and potatoes. Slice the eggplants thinly, sprinkle with salt, and let them sit for 20 minutes to remove excess water and reduce bitterness. Rinse them with cold water and dry with a paper towel. Slice the potatoes and zucchinis thinly.

2. Preparing the meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and crushed garlic, sautéing until golden. Add the minced meat and brown it well, stirring constantly. Add the chopped tomatoes, tomato sauce, salt, pepper, and oregano. Let the mixture simmer for 10-15 minutes until the sauce thickens. If desired, you can add a bay leaf for extra flavor.

3. Assembling the moussaka: Preheat the oven to 180°C. In a baking dish, layer potatoes, followed by eggplants, meat, and zucchinis. Repeat the layers until the ingredients are used up, ensuring the top layer is vegetables.
