The ladyfinger cake is a quick and delicious dessert, ideal for any occasion. This simple recipe combines the soft texture of the layers with the creamy filling and the unmistakable taste of ladyfingers, resulting in a spectacular outcome. With a preparation time of about 30 minutes and a baking time of 15-20 minutes, this cake will delight the whole family. The recipe is for 8 servings, perfect for a gathering with friends or a festive meal.

Ingredients:

For the layers:
- 1 whole egg
- 50 g butter or margarine (preferably butter for a richer taste)
- 2 tablespoons honey (choose quality honey for a more intense flavor)
- 5 tablespoons milk (whole milk will provide a creamier texture)
- 1 tablespoon cocoa (for a hint of chocolate)
- 12 g baking powder
- 400 g flour (sifted to avoid lumps)

For the filling:
- 500 ml milk
- 5 tablespoons flour
- 200 g butter (at room temperature for easy incorporation)
- 200 g powdered sugar
- 500 ml rum essence (or to taste, for an intense aroma)
- 1 vanilla pod or 3 packets of vanilla sugar (natural vanilla will add extra flavor)

For the ladyfingers:
- 21 ladyfingers (choose a quality version)
- 400 ml cherry juice (natural juice for an authentic taste)
- 100 ml milk

Instructions:

1. Start by preheating the oven to 180°C. Prepare a baking tray (30x40 cm) lined with baking paper.

2. In a bowl, beat the egg with the melted butter, honey, milk, cocoa, and baking powder. Mix well to obtain a homogeneous composition.

3. Gradually add the flour, constantly mixing until you get a soft and elastic dough. Divide the dough into two equal parts and roll each part into thin layers, then place them in the tray.

4. Bake the layers in the preheated oven for 15-20 minutes, or until golden. Let them cool completely.

5. Meanwhile, prepare the filling. In a saucepan, add the milk and flour, mixing well to avoid lumps. Place the saucepan on low heat and stir continuously until thickened. Turn off the heat and let it cool slightly.

6. In another bowl, mix the butter with the powdered sugar, rum essence, and vanilla until creamy. Add the cooled milk and flour mixture and mix again until you get a smooth cream.

7. Assemble the cake: place the first layer of dough, spread half of the filling, then place the ladyfingers quickly dipped in the cherry juice and milk mixture. Cover with the second layer and spread the remaining filling.

8. You can decorate the cake with cocoa or powdered sugar for an elegant look. Let it chill in the refrigerator for a few hours to set.

Serving suggestion: Cut the cake into squares and serve it with a scoop of vanilla ice cream or whipped cream for a wonderful contrast of textures.

Possible variations: Replace the cherry juice with orange juice or a mix of berries for a different flavor. You can also add chopped nuts or almonds to the filling for an extra crunch.

This ladyfinger cake is a true feast for the taste buds, combining the sweetness of honey and vanilla with the tartness of cherry juice. Don't forget to enjoy every moment while preparing it!
