To prepare a delicious fish meal, we start by ensuring we have all the necessary ingredients on hand. First, the fish, ideally cod fillets, will be thawed at room temperature. It is important that this process is done slowly to preserve the fine texture of the meat. Once the fish is thawed, it is rinsed under cold running water and placed on absorbent kitchen towels to remove excess water, which will help achieve a crispier crust during baking.

In a large diameter pan, fresh milk is added along with a few bay leaves, which will provide a subtle and pleasant aroma. The cod fillets are carefully placed in the pan and left on low heat. It is essential not to rush this process; we wait for the milk to start simmering slowly. The fish will be cooked on low heat for about a minute, which will help retain its juices and natural flavors.

Meanwhile, we preheat the oven to 180 degrees Celsius. Once the fish has been cooked, the fillets are carefully removed from the milk and placed on a baking tray lined with parchment paper. Now it's time to season the fillets. Salt, a mix of white, green, and black pepper is sprinkled, and for an extra flavor boost, a bit of smoked paprika can be added. Freshly squeezed lemon juice perfectly complements the flavors, providing a pleasant contrast.

The tray with the fish fillets is placed in the oven for about 10 - 15 minutes, the baking time varying depending on the thickness of the fillets. During this time, we can prepare the side dish. The rice is boiled in salted water according to the package instructions, a process that takes about 16 minutes.

To add extra flavor, we will prepare a simple yet delicious sauce. The onion is washed and finely chopped, and the garlic is peeled and also finely chopped. In a pan with a little sunflower oil, we sauté the onion and garlic for 2 - 4 minutes until they become golden and fragrant. When they are ready, we drizzle with the juice of half a freshly squeezed lemon and season with salt, pepper mix, and paprika to enhance the taste.

Finally, the platters or plates can be decorated as desired, presenting a meal that is not only tasty but also attractive. Enjoy the dish with your loved ones and let yourself be carried away by the delicious aromas of the kitchen!
