Carpathian Cake – An Explosion of Flavor and Texture

If you are looking for a cake recipe that will bring a smile to anyone's face, the Carpathian Cake is the perfect choice! This chocolate cake not only looks amazing, but its taste is unforgettable. The recipe I will share with you is simple, but it requires a little patience and love. Let's start our culinary journey!

Preparation time: 30 minutes
Baking time: 30 minutes
Total time: 1 hour
Number of servings: 12

Necessary ingredients:

*For the layers:*
- 6 fresh eggs
- 6 tablespoons of sugar
- 6 tablespoons of flour
- 1 vanilla essence

*For the cream:*
- 2 eggs
- 2 tablespoons of water
- 1 cup of sugar
- 250 g of margarine (at room temperature)
- 50 g of cocoa
- 1 rum essence

Preparation of the layers:

1. Separating the eggs:
Start by carefully separating the egg whites from the yolks. It is important that the bowls are clean and dry; otherwise, the egg whites will not whip properly.

2. Whipping the egg whites:
Beat the egg whites in a large bowl using an electric mixer until they become frothy. Add 4 tablespoons of sugar while continuing to mix until you achieve a firm and glossy meringue.

3. Whipping the yolks:
In another bowl, beat the yolks with the remaining 2 tablespoons of sugar and the vanilla essence until they become a fluffy cream with a light color.

4. Combining the mixtures:
Add the yolk mixture over the egg whites, gently folding with a spatula or spoon, using a top-to-bottom motion to avoid losing air from the egg whites.

5. Adding the flour:
Sift the flour directly into the mixture and continue to fold carefully until you obtain a homogeneous mixture.

6. Baking the layers:
Preheat the oven to 180°C. Line a baking tray with parchment paper and pour half of the mixture for the layers. Bake for about 15 minutes or until the layer turns slightly golden and passes the toothpick test. Repeat with the remaining mixture.

Preparation of the cream:

1. Whipping the eggs:
In a bowl, beat the 2 eggs with the sugar and water. Then, place the bowl over a steam bath. Stir constantly with a whisk for 10-15 minutes until the mixture thickens.

2. Adding the cocoa:
Once the cream has thickened, remove the bowl from the steam bath and add the cocoa, mixing well to ensure it is fully incorporated.

3. Incorporating the margarine:
Let the cream cool completely, then add the soft margarine and the rum essence. Mix well until you obtain a smooth and homogeneous cream.

Assembling the cake:

1. Cutting the layers:
After the layers have cooled, cut each layer into three equal parts.

2. Spreading the layers:
Start spreading each piece of layer with the cocoa cream, making sure to use a generous amount. If you have saved some cream, you can use it to decorate the cake.

3. Cooling:
Place the last unspread layer on top and put the cake in the refrigerator to allow the cream to set for about an hour.

4. Final cutting:
Remove the cake from the refrigerator and cut it into squares. Each square can be cut diagonally to form triangles.

5. Finishing with cream:
Spread the triangles with the remaining cream, ensuring each piece is well covered. Place the cake back in the refrigerator for 30 minutes to chill well.

Serving suggestions:

The Carpathian Cake is delicious served plain, but you can accompany it with a scoop of vanilla ice cream or a warm cup of hot chocolate for an even more indulgent dessert. It is perfect for special occasions or simply to treat yourself after a long day.

Useful tips and variations:

- You can add chopped nuts to the cocoa cream for an extra texture.
- If you want a fluffier version, replace the margarine with butter, but make sure it is at room temperature to incorporate easily.
- The Carpathian Cake can be decorated with chocolate flakes or a chocolate glaze for an even more tempting appearance.

Nutritional benefits:

This cake contains protein from the eggs and healthy fats from the margarine. The cocoa brings antioxidants, and the sugar provides a quick energy boost. However, consume in moderation, considering the high caloric content. A serving of cake has about 300 calories, so it is best enjoyed as part of a balanced diet.

By trying this recipe, you will create not only a delicious dessert but also cherished memories with loved ones. So put on your apron and unleash your culinary creativity! Bon appétit!
