2. Meanwhile, prepare the cheese filling. In a bowl, combine the cottage cheese, powdered sugar, vanilla essence, and, if you choose, the egg for a creamier texture. Mix well until the ingredients are fully integrated.

3. Heat a non-stick skillet over medium heat and add a little oil. Pour a ladle of pancake batter into the skillet, rotating the skillet to evenly cover the bottom. While the vanilla sauce is boiling, we fill the pancakes and arrange them in a tray like stuffed cabbage. When the sauce has boiled, we take it off the heat and pour it over the pancakes. We put the tray in the oven at high heat while we beat the 6 egg whites with the last 6 tablespoons of sugar. When the egg whites are foamy, we take the tray out and arrange the foam so that it forms an even layer everywhere. We put it back in the preheated oven at very high heat and keep it until the meringue turns golden. When the Banat pancakes are ready, they are dusted with powdered sugar and grated orange peel.
