- 2 kg pork (choose meat with a moderate fat content for a rich taste)
- 4 pieces of caltaboși casings
- 300 g rice (approximately 1.5 l tablespoons)
- Pepper, allspice, thyme, sweet paprika – to taste
- 3-4 tablespoons oil (preferably olive oil or sunflower oil)
- 8-10 tablespoons mineral water (for a fluffier texture)
- For boiling:
- 1 glass of white wine (choose a quality wine, as it will influence the final taste)
- Ground pepper, a few peppercorns
- Coriander (optional, for an extra flavor)
- A sprig of thyme
- 3 cloves
- 2 bay leaves
- Salt – to taste
Preparing the casings:
1. Cleaning the casings: The casings are essential for achieving perfect caltaboși. Start by washing them thoroughly under cold running water. Then, using a pencil or another cylindrical object, turn the casings inside out. This step is important for cleaning the interior.
2. Heating the casings: Carefully scrape the inside of the casings to remove impurities. Once finished, place the casings in a bowl with cold water, salt, and a bit of vinegar, letting them sit for 15-20 minutes. Then, rinse them again with cold water and drain well.
Preparing the mixture:
3. Pork: Wash the pork well and remove any skin or excess fat. Cut it into cubes and pass it through a meat grinder. This step ensures an even texture for the mixture.
4. Mixing meat with rice: In a large bowl, combine the ground meat with the washed rice, spices, salt, and oil. Gradually add the mineral water, mixing well until you achieve a homogeneous mixture. It is essential to taste the mixture to adjust the spices according to your preferences.

Boiling the caltaboși:
8. Preparing the broth: In a large pot, place the caltaboși and add the white wine, spices (pepper, coriander, thyme, cloves, bay leaves), and enough warm water to cover the caltaboși.
9. Boiling: Place the pot on low heat and let it simmer for about 1 hour. It is important not to keep the heat too high, as the caltaboși need to simmer slowly to achieve a tender texture.
