Preparation:
1. Start by preheating the oven to 180°C and prepare a baking tray lined with parchment paper. This step is essential to prevent the cookies from sticking and to ensure even baking.
2. In a large bowl or your Kenwood mixer bowl, add the whole wheat flour, brown sugar, baking powder, and salt. Mix the dry ingredients well to ensure that all flavors are evenly distributed.
3. Add the butter or coconut oil cut into cubes. If using a food processor, use the dough blades to integrate the butter into the flour mixture until you achieve a texture similar to wet sand. If working by hand, you can use a knife or simply your hands to do this step.
4. In another bowl, beat the egg (or mashed banana) and add it to the dry ingredient mixture. Mix everything well until combined.

Everything is mixed together; I use a Kenwood mixer, but since it's a soft dough, you can use any other robot with dough blades if you want. After that, take it and put it on a board, shaping it while always using flour, possibly adding more if necessary. I divided this amount into pieces. Start making a sheet that you then cut with the shape you want; we made them round with a hole in the middle, which here is called 'macine', or square, or filled with orange marmalade. For the filled ones, I pressed a little with the shape to get the outline and put a bit of marmalade in the middle. Then I placed the sheet on top, using the same sheet, folding it. I pressed a little around the mound with the filling so that it wouldn’t come apart, and then I cut with the shape. This is how the filled ones looked on the tray.
