Smart Cake
To prepare this delicious "Smart" cake, start by gathering the necessary ingredients. You will need 7 egg yolks, 5 tablespoons of sugar, a pinch of salt, and vanilla sugar for a pleasant taste. Get into the cooking atmosphere by thoroughly rubbing the egg yolks with the sugar until the mixture becomes a homogeneous cream of a bright yellow color. Add a little salt to balance the flavors, and the vanilla sugar will bring a wonderful aroma.
Once you have obtained a homogeneous mixture, add the soft butter, which should be at room temperature. Mix well until the butter is completely incorporated into the mixture. Next, add the ammonia, which will help the cake rise nicely. Then, incorporate the 9 tablespoons of flour, mixing with a wooden spoon, or, if you prefer, you can use a mixer. It is important to gradually pour in 1/4 liters of milk, stirring continuously to avoid lumps. You will notice that the butter may seem to separate, but don’t worry, it’s a normal process.
After achieving a uniform composition, add the remaining milk and continue to mix. In a separate bowl, beat the 7 egg whites with 7 tablespoons of sugar until you obtain a firm foam. This foam will bring an airy texture to the cake. Pour the egg white foam over the egg yolk mixture, carefully folding from top to bottom to avoid deflating the air in the foam. The goal is to achieve a fluid and homogeneous composition.
Prepare a high-sided baking dish, greasing it with butter and dusting it with flour to prevent sticking. Carefully pour the mixture into the dish, then place it in the preheated oven. Bake at low heat for 45-60 minutes. It is important not to open the oven door during the first 30 minutes to allow the cake to rise evenly.
Once removed from the oven, the cake may tend to sink slightly, but don’t worry! This is part of its charm. Let the cake cool completely, then dust it with sugar. Cut it into squares and enjoy each piece. You will discover why it is called "Smart", as during baking, two layers of dough formed on their own, with a delicious layer of cream in the middle, resulting in a cake with a unique texture and exceptional taste.
