Sidy's Donuts

Ingredients: 1 kg flour, 20 g fresh yeast, 1/2 teaspoon salt, 100 g granulated sugar, 1 egg, zest of one lemon, 750 ml mineral water, 500 ml oil, 50 ml milk

To prepare the most delicious donuts, start by activating the yeast. In a small bowl, combine the yeast with warm milk and add a teaspoon of sugar. Gently mix and let the mixture rise for about 10 minutes until it becomes frothy. This is an essential step, as the activated yeast will ensure a fluffy texture for the donuts.

Meanwhile, take a large bowl and add the sifted flour, which will contribute to the lightness of the dough. Add the salt, remaining sugar, beaten egg, and lemon zest to add a note of fresh flavor. Mix the dry ingredients with a wooden spoon or your hands, then gradually start incorporating the sparkling water, adding a little at a time. This will help hydrate the flour and make the dough fluffier.

After you have added all the water, continue to knead the dough with the necessary energy until it becomes elastic and smooth. It is important to knead enough so that air bubbles form inside the dough, which will contribute to the rise of the donuts. Once the dough is well kneaded, cover it with a clean towel and let it rise in a warm place for about 30 minutes.

After the dough has risen, prepare a work surface by sprinkling flour to prevent sticking. Take the dough and roll it out with a rolling pin until you achieve a thickness of about 1.5 cm. Using a donut cutter, cut circles from the dough, making sure to place them on a floured surface. Let the donuts rise for another 20 minutes, covering them with a towel to prevent drying out.

In a deep pot, heat the oil to an ideal frying temperature. When the oil is hot, carefully add the donuts, making sure not to overcrowd them. Fry them until golden on both sides, turning them with a spatula for even frying. Once they are ready, remove the donuts from the oil and let them drain on a paper towel to absorb excess oil.

After they have cooled slightly, you can sprinkle them with powdered sugar or fill them with jam, chocolate cream, or any other preferred filling. Enjoy the warm donuts with a cup of coffee or tea, and savor a delicious moment full of flavor and tradition.
