We start this delicious recipe by preparing the necessary ingredients to obtain a fresh, creamy, and flavorful cheese. The first step is to bring the milk to a boil in a medium-sized pot. It is recommended to use fresh, high-quality milk to achieve a tasty final result. As the milk begins to heat up, we will notice a fine foam forming on the surface, a sign that it is approaching the boiling point.
When the foam starts to rise, it is the ideal time to add the additional dairy ingredients. We will patiently add one tablespoon of sour cream, followed by one tablespoon of yogurt, constantly stirring with a wooden spatula or a whisk. This step is crucial, as continuous mixing helps to homogenize the mixture, preventing lumps from forming. We continue to add sour cream and yogurt until we have used the necessary 12 tablespoons.
After we finish adding all the ingredients, it is time to add the juice of a lemon. This will bring a touch of acidity and help coagulate the milk, turning it into a deliciously creamy cheese. We continue to stir, ensuring that the juice is well incorporated into the mixture. Once we finish this step, we can turn off the stove and let the mixture sit for 3-4 minutes.
During this time, we can observe how the whey begins to separate from the cheese, forming a firmer consistency. We leave the mixture in the pot for about 20 minutes to complete the coagulation process. After this time, we will take a clean cheesecloth bag and strain the cheese, allowing the whey to drain.
As a result of this process, we will obtain a firm, creamy cheese, with a sweet and pleasant taste, perfect for use in various dishes or served simply with fresh bread. The final amount of cheese obtained is approximately 750 grams, enough to satisfy even the most discerning gourmets. This simple and quick recipe brings us closer to culinary traditions, giving us the pleasure of enjoying a homemade product full of flavor.
