Mug Muffins
One day when I was craving something sweet, but I had neither the time nor the patience for a classic cake, I discovered this mug muffin version. Basically, you mix everything in a bowl, pour it into a few mugs, and pop it in the microwave. I tried leaving them for three minutes, but they were almost overflowing, so two and a half minutes is about the limit. They should be eaten right after you take them out of the oven while they are still warm.
Quick Info
Total time: 7-10 minutes
Preparation time: 5 minutes
Cooking time: 2-2.5 minutes in the microwave
Servings: 4 mug muffins
Difficulty: Very easy
Recipe type: Quick dessert, chocolate cake, occasions when you don’t want to spend much time in the kitchen
Ingredients
4 tablespoons flour
1 teaspoon baking powder
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
Preparation method
1. In a large bowl, combine all the ingredients: flour, baking powder, sugar, cocoa, egg, milk, and oil.
2. Mix well with a spoon or a small whisk until you get a smooth batter without visible lumps.
3. Pour the batter into 4 regular coffee mugs. Divide as evenly as possible.
4. Place one mug (or two if they fit in the microwave) and cook on high power for 2 and a half minutes. You can check after two minutes, depending on your microwave. If you leave them for 3 minutes, they risk rising too much and overflowing.
5. Carefully remove them as they are hot. They can be consumed immediately while they are still soft and warm.
Why I make this recipe often
I prefer it because it’s very quick and I don’t have to dirty many dishes. If I don’t have time or the desire for a complicated dessert, it’s a good solution. The ingredients are always around the house, and I don’t need to plan anything in advance.
Tips and variations
Tips
Use ceramic or porcelain mugs, not plastic or metal.
Do not fill the mugs more than halfway to avoid overflow while baking.
If you want them to be fluffier, do not overmix the batter.
Substitutions
You can use brown sugar instead of white, but the texture will be slightly denser.
For a lactose-free version, you can try a simple plant-based milk.
Variations
You can add a square of chocolate in the center of each mug before baking for a softer center.
You can sprinkle a little powdered sugar on top at the end, but it’s not necessary.
If you don’t want cocoa, you can skip it and add an extra tablespoon of flour.
Serving ideas
They are best eaten warm, straight from the mug.
They also go well with a small spoonful of whipped cream or plain yogurt if you have it on hand.
Frequently asked questions
1. Can mug muffins be made without eggs?
If you don’t want to use an egg, you can try replacing it with 2 tablespoons of yogurt or a little applesauce, but the texture will be a bit denser.
2. Can I use a regular oven instead of a microwave?
The recipe is designed for the microwave. In a conventional oven, it would take longer, and the result will be different (probably drier). For this quick version, the microwave is the most suitable.
3. How big should the mugs be?
Classic coffee mugs, 200-250 ml. If they are smaller, you can get more servings, but don’t fill them completely, as the batter rises a lot.
4. What should I do if the batter overflows in the microwave?
Try not to fill the mugs more than halfway and check the power of your microwave. Each microwave heats differently; sometimes you need to adjust the time by 20-30 seconds less.
5. Can I add fruits or nuts?
I haven’t tried with fresh fruits, but a few small pieces of nuts or hazelnuts can be added without changing the cooking times.
Nutritional values
Estimation for one serving (1 mug out of 4):
Calories: approximately 200-220 kcal
Carbohydrates: 25-28 g
Protein: 3-4 g
Fats: 9-10 g
These values are indicative and may vary depending on the ingredients used. If you add chocolate or other toppings, the calorie count will increase.
Storage and reheating
Mug muffins are best right after you take them out of the microwave. They do not store well from one day to the next, as they dry out quite quickly. If you want, you can reheat them in the microwave for 20-30 seconds, but they will not have the original texture.
