Fluffy Sweet Bread: A Festive Delicacy
The sweet bread is more than just a simple dessert – it is a tradition, a symbol of family reunions and the joy of sharing unforgettable moments. Carefully and lovingly prepared, the fluffy sweet bread combines the sweet flavors of the filling with the soft texture of the dough, making each slice an explosion of flavor. In this recipe, I will guide you step by step to achieve the fluffiest sweet bread, perfect for festive meals or to be enjoyed with loved ones.
Total preparation time: 4 hours (including rising time)
Working time: 1 hour
Number of servings: 4-5 sweet breads (depending on the size of the pans)
Ingredients:
- 2 kg of wheat flour (choose a high-quality flour for the best texture)
- 1 l of warm milk (not hot, to activate the yeast)
- 10 eggs (5 whole and 5 yolks)
- 700 g of sugar (divided: 450 g for eggs, 200 g for milk, 50 g for meringue)
- 1 cup of oil (preferably sunflower oil)
- 1 pack of margarine (or butter, if you prefer)
- Turkish delight (about 200 g, sliced thin)
- Walnuts (300 g, finely chopped)
- Raisins (optional, 100 g)
- Cocoa powder (2-3 tablespoons for meringue)
- 1 essence of rum
- 1 essence of vanilla
- Two cubes of fresh yeast
Step 1: Activating the yeast
In a cup, add two teaspoons of sugar, one tablespoon of flour, and a cup of warm milk. Mix well and let the yeast rise in a warm place for 15-20 minutes. You will know it’s ready when it becomes frothy and doubles in volume.
Step 2: Preparing the mixture
In a large bowl (or a basin), add the entire amount of flour. Make a well in the center and pour in the activated yeast. Add the beaten eggs with the sugar (450 g) and then the remaining warm milk with sugar (200 g). Mix with a wooden spoon, gradually adding the ingredients until the mixture becomes too thick to stir.
Step 3: Kneading the dough
After mixing the ingredients well, start kneading the dough with your hands. Add the warmed oil (not hot) and melted margarine. It is important that the oil is warm but not boiling, to avoid killing the yeast. Knead the dough until it becomes elastic and no longer sticks to your hands – this process can take 10-15 minutes. An important suggestion is to slap the dough on the work surface at least 100 times; this will help the sweet bread rise fluffily.
Step 4: Rising the dough
Place the dough in a clean bowl, cover it with plastic wrap and then with a thick towel, and let it rise in a warm place for about 2 hours, or until it doubles in volume.
Step 5: Preparing the filling
Meanwhile, prepare the filling. Slice the Turkish delight thinly, finely chop the walnuts, and if you like, soak the raisins in warm water to make them fluffier. Whip the remaining egg whites with 50 g of sugar until you get a firm meringue. Add cocoa powder and mix well. Keep the filling in the fridge until ready to use.
Step 6: Shaping the sweet breads
Once the dough has risen, divide it into 4-5 pieces, depending on the desired size of the sweet breads. Roll each piece out on a surface, add the filling of Turkish delight, walnuts, raisins, and meringue, then carefully roll the dough into a log. Place each log in greased pans or lined with parchment paper.
Step 7: Second rising
Let the sweet breads rise in the pan for 20 minutes, to fill with air and become fluffy.
Step 8: Baking
Preheat the oven to 180°C. Before placing the sweet breads in, brush them with beaten egg and sprinkle a mixture of sugar and ground walnuts on top, for a shiny appearance and delicious aroma. Bake the sweet breads for 45-60 minutes or until golden brown and pass the toothpick test (insert a toothpick in the center; if it comes out clean, they are done).
Step 9: Cooling and serving
Once the sweet breads are baked, let them cool in the pans for 10 minutes, then remove them and let them cool completely on a rack. Slice and serve with warm tea or a glass of milk, for a perfect combination.
Tips and variations
- You can add various flavors to the dough, such as grated lemon or orange zest, for a touch of freshness.
- If you want to experiment, try replacing some of the walnuts with hazelnuts or pistachios for a different filling.
- The sweet bread is also wonderful served with a spoonful of fruit jam or with a chocolate glaze for a more decadent dessert.

The sweet bread, although a calorie-rich dessert, also offers essential nutrients due to the ingredients used. Eggs are an excellent source of protein, and nuts provide healthy fats and fiber. Consumed in moderation, the sweet bread can be part of a balanced diet.
