Let's get started!
Ingredients
For the dough:
- 5 egg yolks
- 200 g sugar
- 3 packets of vanilla sugar
- 150 g butter (melted and cooled)
- Zest of 1 lemon
- Zest of 1 orange
- 3 teaspoons of yeast (or 30 g fresh yeast)
- 450 ml lukewarm milk
- 100 ml lukewarm mineral water
- Flour (about 1 kg, as needed)
- 1/2 teaspoon salt
For the filling:
- 500 g cottage cheese (preferably semi-fat)
- 2 eggs
- 100 g raisins (soaked in lukewarm water or rum)
- 3 packets of vanilla sugar
- 150 g sugar
- 2-3 tablespoons sour cream
For brushing:
- 2-3 egg yolks (beaten)
- 5-6 tablespoons milk
For decoration:
- Powdered sugar (for sprinkling on top)
Step by step
1. Preparing the yeast
In a small bowl, mix the yeast with 100 ml of lukewarm mineral water and 3 tablespoons of sugar, adding 3 tablespoons of flour. Let the yeast rise for 15-20 minutes until frothy and doubled in volume. This is the secret to a fluffy and well-leavened dough.
2. Preparing the dough
Sift the flour into a large bowl and add the salt. In the center of the flour, make a well and pour in the risen yeast, egg yolks, lukewarm milk, and melted butter. Mix with a spatula or your hands until the ingredients combine. Then, knead the dough for about 20 minutes until elastic and smooth. Cover it with a clean towel and let it rise in a warm place until doubled in volume (about 1 hour).
3. Preparing the filling
Meanwhile, let's prepare the filling. In a bowl, beat the egg whites with a pinch of salt until foamy. Add the sugar and vanilla sugar and continue beating until the sugar dissolves. Fold in the cottage cheese, egg yolks, sour cream, and raisins into the egg white foam. Mix well, ensuring there are no lumps.
4. Forming the pies
Once the dough has risen, roll it out on a floured surface. Form a sheet about 0.5 cm thick and cut it into squares of about 10-12 cm. Place a tablespoon of filling in the center of each square and fold it, bringing the corners to the center, like an envelope.
5. Baking
Place the pies on a baking tray lined with parchment paper. Beat the egg yolks and milk together and brush each pie with this mixture for a golden and shiny crust. Preheat the oven to 180°C and bake the pies for 30-40 minutes or until golden brown.
6. Serving
After removing them from the oven, let them cool slightly. Serve warm or at room temperature, dusted with powdered sugar. These pies are wonderful alongside a cup of tea or aromatic coffee.
Useful tips
- About the ingredients: Use well-drained cottage cheese to avoid excess moisture in the filling. Raisins can be replaced with golden raisins or even dried cranberries for a tart flavor.
- Variations: You can experiment with flavors by adding a few drops of vanilla extract or a splash of rum to the filling. Also, for a festive version, you can add chopped nuts.
- Frequently asked questions:
- Can I use dry yeast instead of fresh yeast? Yes, you can use about 10 g of dry yeast, making sure to activate it according to the instructions on the package.
- What can I do with leftover dough? If you have leftover dough, you can use it to make rolls or pizza.
