- 1 kg red kapia peppers
- 5-6 pieces of red pepperoni
- 2 kg large, ripe tomatoes
- 1.5 kg white onions
- 1 liter sunflower oil
- 200 g sugar
- 4 tablespoons salt
- 1 packet of spicy fix (hot/sweet)
- 7-8 bay leaves
- 2 teaspoons ground pepper
- 5 tablespoons balsamic vinegar
- Thyme, oregano, to taste
- 1 teaspoon granulated garlic

Step 1: Preparing the ingredients
Start by choosing the freshest ingredients. Eggplants, peppers, and ripe tomatoes are essential for achieving a delicious zacusca. Buy them from a local producer or market to benefit from the best flavors. Wash all the vegetables well and prepare them for roasting.

Step 2: Roasting the vegetables
Using a grill or a covered pan, roast the eggplants over high heat. Place them directly on the grill, without water, and cover them to cook evenly. Once done, let them cool slightly, then peel and drain them.

After 15 minutes, let the mixture cool slightly, then add the bay leaves, sugar, salt, the spicy fix packet, thyme, oregano, and pepper. Use an immersion blender to puree everything, achieving a uniform consistency.
