This potato dumpling recipe combines tradition with innovation, offering a rich flavor and perfect texture. Whether you serve them as an appetizer at a party or as a side dish at a family meal, these dumplings are sure to impress all your guests.
Preparation time: 20 minutes
Cooking time: 50-60 minutes
Total time: 1 hour and 20 minutes
Number of servings: 25 dumplings (6 cm in diameter)
Ingredients:
- 800 g raw potatoes (about 4 large potatoes, peeled)
- water (for boiling the potatoes)
- salt (for boiling)
- 100 g salami (preferably Szekler, but you can use any type you prefer)
- 1 medium onion
- 3 cloves of garlic
- 1 egg
- 70 g sheep cheese
- 40 g smoked cheese
- 30 g flour
- 5 g baking powder
- 3-4 tablespoons breadcrumbs
Step by step:
1. Boil the potatoes: Start by peeling the potatoes and cutting them into cubes. Place them in a pot and cover with water. Add a teaspoon of salt and let them boil for 20-25 minutes, starting the timer once the water begins to boil. The potatoes are ready when they can be easily pierced with a fork.
2. Prepare the ingredients: While the potatoes are boiling, finely chop the salami and smoked cheese. Use a sharp knife to do this, so you get uniform pieces. Mash the sheep cheese with a fork until it becomes a fine paste.
3. Prepare the onion and garlic: Peel the onion and garlic, then place them in a food processor. Blend until you get a fine paste. If you don't have a food processor, don't worry! You can finely chop the onion and crush the garlic with a fork.
4. Mash the potatoes: Once the potatoes are boiled, drain the water and mash them well with a potato masher or a fork until you get a smooth puree. Make sure there are no large pieces left, so the dumplings have a uniform texture.
5. Mix the ingredients: In a large bowl, add the potato puree, chopped salami, smoked cheese, sheep cheese, onion and garlic paste, and the egg. Mix well to combine the ingredients. Then add the flour and baking powder, adjusting the amount of salt to taste.
6. Shaping the dumplings: Prepare a baking tray lined with parchment paper. Wet your hands with water (this trick will help prevent the mixture from sticking to your hands) and take a portion of the mixture with a spoon. Form balls of your desired size, then roll them in breadcrumbs, ensuring they are evenly coated. Place them on the prepared tray, leaving some space between them.
7. Baking: Preheat the oven to 200 degrees Celsius. Place the tray in the oven and let the dumplings bake for 50-60 minutes, or until they become golden brown and crispy on the outside.
8. Cooling and serving: Once the dumplings are ready, take them out of the oven and let them cool slightly. They are delicious served warm and can be accompanied by a garlic and dill yogurt sauce or homemade ketchup, but they also pair perfectly with fresh tomatoes, pickled cucumbers, or various salads.
Practical tips:
- Choosing potatoes: Opt for potatoes that have a higher starch content, such as Russet or floury potatoes. These will contribute to a better texture of the dumplings.
- Ingredient variations: You can experiment with different types of cheese or add herbs to the mixture, such as dill or parsley, to enhance the flavors.
- Olive oil: If you want a healthier option, you can choose to fry the dumplings in a pan with a little olive oil instead of baking them in the oven.
Nutritional benefits: These dumplings are a good source of carbohydrates from potatoes, protein from the egg and salami, and calcium from the cheese. They can be included in a balanced diet, but it is best to consume them in moderation, considering the fat content from the salami and cheese.
Frequently asked questions:
- Can I replace the salami with chicken? Yes, you can use ground chicken or even turkey for a lighter version.
- How can I keep the dumplings for longer? These dumplings can be kept in the fridge for 3 days in an airtight container. You can reheat them in the oven or in a pan.
- Can I freeze the dumplings? Yes, you can freeze the dumplings raw or baked. If freezing raw, make sure to place them on a tray so they don’t stick together, then you can transfer them to a freezer bag.
Potato dumplings are not only a simple and delicious recipe, but also an excellent way to use the ingredients you have on hand. You can add a touch of your creativity to each dish, transforming them into a personal specialty. So, don’t hesitate to experiment and enjoy every bite!
