To prepare a delicious recipe for stuffed cabbage rolls with rice and aromatic herbs, start by heating oil in a deep pan. Add finely chopped onion and let it sauté on low heat, stirring occasionally, until it becomes transparent and slightly golden. This process will release the flavors of the onion, which will blend perfectly into the rice filling. Once the onion is sautéed, add the washed and drained rice, mixing well to coat it with the flavored oil. Pour in a glass of water and let the mixture simmer on low heat, stirring occasionally, until all the water is absorbed by the rice. Then, it's time to add the pine nuts, which you have previously toasted in a dry pan until they become slightly golden and fragrant. The next step involves adding raisins, which will bring a sweet contrast and an interesting texture to the filling. Season the mixture with salt, fresh chopped mint, and dill, mixing well to combine all the flavors.

Once the filling is ready, prepare the grape leaves. On each leaf, place a tablespoon of filling and start rolling the cabbage rolls, making sure to twist them well to avoid unraveling. Shape the rolls into thin cylinders, which will be easier to cook and will have an elegant appearance. Place the rolls in a pot lined with grape leaves, ensuring that you leave enough space between them. You can form layers, but don’t forget to place a grape leaf between layers to add flavor and prevent sticking.

To enhance the flavor, drizzle lemon juice and a thread of olive oil over the rolls in a spiral, starting from the edge of the pot towards the center. Add enough water to completely cover the rolls. Cover the pot with a plate smaller than its diameter or with a lid to prevent the rolls from rising to the surface during boiling. Simmer on low heat, making sure to check the water level occasionally to prevent sticking. The cooking time is about one hour to one and a half hours, but you can also opt for baking in the oven at a medium temperature.

Once the rolls are cooked, let them cool well before removing them from the pot. They are served cold, alongside slices of fresh lemon, and if desired, add a drizzle of raw olive oil on top, along with lemon juice for a refreshing taste.
