Pumpkin and Carrot Soup
To prepare a delicious and nutritious carrot and pumpkin soup, we start by peeling the carrots, which we cut into slices about one centimeter thick. Then, we place them in a pot with enough water to completely cover them. It is recommended to add a pinch of Delikat to enhance the flavor of the soup and, if you wish, you can also add chicken broth, which will bring an extra flavor. This step will make the vegetables flavorful and tasty.
After we have boiled the carrots, we let them simmer over medium heat for about 10-15 minutes, or until they become almost soft. When we feel that the carrots are about to soften, we add the pumpkin, which we have peeled and cut into cubes. The pumpkin will add a natural sweetness and a pleasant creaminess to the soup. We continue to boil the mixture for 15-20 minutes, stirring occasionally, until both the carrots and the pumpkin become extremely soft.
Once boiled, we scoop out a cup or a bowl of the cooking water to use later, and then we use a blender or an immersion mixer to turn the vegetables into a smooth cream. It is important to ensure that we achieve a homogeneous texture, without large chunks that could affect the taste sensation. After blending well, we pour the vegetable cream into a clean pot or saucepan.
If we want a creamier soup, at this point we can add milk and cream, mixing well to combine the ingredients. We also gradually add the remaining cooking water we saved until we achieve the desired consistency. We season with salt and pepper to taste, being careful to taste the soup and adjust the seasonings so that the flavor is perfectly balanced.
We let the soup come to a boil so that all the ingredients combine harmoniously. Once the soup has started to boil, we can set it aside and let it cool slightly before serving.
