Once the egg whites are beaten, we begin to incorporate them into the egg yolk mixture, adding them gradually. It is important to use a spatula or a whisk to mix with gentle up-and-down motions to avoid losing air from the egg whites. After incorporating some of the egg whites, we add the sifted flour, continuing to alternate between the two ingredients until we achieve a uniform and lump-free composition.

Now that we have prepared the batter, we prepare the cake pan, which we line with baking paper, ensuring it is well secured. We carefully pour the mixture into the pan, leaving a few tablespoons of the mixture aside. In this mixture, we add cocoa, mixing well until we obtain a smooth paste.
