Baked Potatoes with Fried Eggs: A Comforting and Delicious Recipe

On a beautiful day, I decided to transform a traditional recipe for potatoes with fried eggs into a healthier baked version that is just as tasty. The result was surprisingly good, so much so that Doru, a big potato lover, asked me if I had the recipe for the next day as well. So, I thought I’d share this simple yet flavorful recipe with you to help bring a touch of comfort to your meals!

Preparation time: 15 minutes
Baking time: 40 minutes
Total time: 55 minutes
Servings: 4

Ingredients

- 6 medium potatoes
- 4 fresh eggs
- 200 g sheep cheese (or feta cheese for a more accessible option)
- 4 tablespoons olive oil (or vegetable oil)
- 1 glass of water (approximately 250 ml)
- Salt, to taste
- Pepper, to taste
- 1 teaspoon sweet paprika
- 1 teaspoon dried thyme
- Fresh dill (optional, for garnish)

Nutritional Information

This recipe is rich in carbohydrates from the potatoes, protein from the eggs, and healthy fats from the cheese. Each serving contains approximately 300 calories, making it a suitable option for lunch or dinner. Potatoes are an excellent source of fiber, vitamin C, and potassium, while eggs provide quality protein and healthy fats.

Instructions

1. Preparing the potatoes: Start by peeling the 6 potatoes and slicing them into approximately 1 cm thick rounds. Avoid slicing them too thin, as they may stick together during baking.

2. Seasoning: Place the potato slices in a baking dish. Add the 4 tablespoons of oil and season with salt, pepper, sweet paprika, and thyme. Mix well, ensuring each potato slice is evenly coated with the spices.

3. Adding the water: Dissolve some salt in a glass of water and pour it over the potatoes. The water should reach the level of the potatoes, which will help them cook evenly.

4. Initial baking: Preheat the oven to 200 degrees Celsius (or 180 degrees if using a fan oven) and place the baking dish with the potatoes inside. Bake the potatoes for 25-30 minutes or until they start to turn golden and slightly crispy at the edges.

5. Adding the eggs and cheese: Once the potatoes are ready, remove the dish from the oven. Make 4 indentations in the potatoes and crack an egg into each indentation. Grate the sheep cheese over the eggs and potatoes.

6. Final baking: Put the dish back in the oven and continue baking for about 10 minutes or until the eggs are cooked to your liking. If you prefer softer eggs, you can check after 8 minutes.

7. Serving: After removing the dish from the oven, you can sprinkle fresh dill on top for added flavor. Serve warm, alongside a green salad for a balanced meal.

Serving Suggestions

These baked potatoes with fried eggs are perfect for a comforting lunch or a quick dinner. You can serve them with a tomato and cucumber salad for a fresh contrast. Additionally, a slice of whole-grain bread or a delicious garlic yogurt sauce would perfectly complement this dish.

Recipe Variations

1. Cheddar cheese potatoes: Replace sheep cheese with cheddar cheese for a more intense flavor.
2. Adding vegetables: You can add diced red onion or bell peppers to the baking dish for extra flavor.
3. Alternative spices: Experiment with herbs such as rosemary or basil to create a different flavor profile.
